CepHere foraging is tihaja ohota, the quiet hunt: a deep Slavic folk tradition of salting and marinating milk-caps by the jarful and drying the prized white mushroom for winter. This guide covers ten cherished edibles and the eight dangerous species that share their woods. It is calm and honest, never a guarantee of safety.
What matters most
- The white mushroom (Boletus edulis), the chanterelle and the birch and aspen boletes are the safest beginner edibles, with no deadly lookalikes in the north.
- The deadliest trap is the death cap (Amanita phalloides), responsible for most fatal poisonings in Russia, Ukraine and Poland; learn it before any other.
- The main toxin groups to fear are amatoxins (liver), orellanine (kidneys) and gyromitrin, each with a deceptively delayed onset.
- Some species are reclassified over time: brown roll-rim (Paxillus involutus), once widely eaten, is now known to be lethal, and false morel (Gyromitra esculenta) is toxic despite tradition.
- Handling and storage matter as much as identification: bitter milk-caps must be soaked and salted, and improperly sealed preserves risk botulism.
- The defining culture here is preservation, salting and marinating milk-caps and drying boletes as winter stores.
The great toxin groups
A handful of toxin families account for the region's most serious poisonings. The most dangerous share one cruel trait: symptoms that arrive late, long after the meal seems harmless.
Found in the death cap, destroying angel and deadly Galerina, alpha-amanitin halts RNA polymerase II and kills liver cells. Gut symptoms appear after 6-24 hours, followed by a deceptive recovery, then liver and kidney failure on days 2-4. Cooking, drying or freezing does not destroy it.
Carried by the deadly Cortinarius webcaps, orellanine is a kidney toxin with an extreme latency: renal failure 4-15 days after the meal (median about 8.5 days), often with no early warning. There is no specific antidote and many cases need dialysis or transplant.
The false morel's gyromitrin converts in the body to monomethylhydrazine, a relative of rocket fuel. It causes vomiting, liver damage and seizures; severe cases can be fatal (mortality around 25%). It is water-soluble and volatile, and even the cooking vapours are dangerous.
The active compounds of fly agaric and panther cap act on the central nervous system, with panther cap also containing muscarine. They cause nausea, delirium, seizures and loss of coordination; rarely fatal but serious, and the panther cap is the more toxic.
The brown roll-rim carries antigens that survive cooking. After repeated eating, often over years without trouble, the body can sensitise and mount an immune-mediated haemolysis attacking red blood cells. This can cause acute anaemia, kidney failure, DIC and death, with symptoms beginning as soon as 1-2 hours after the last meal.

How to recognise it
Cap 7-30 cm, brown (penny-bun coloured), slightly tacky when wet, domed when young and flattening out. Instead of gills there is a tube layer (pores) under the cap: white when young, turning yellow-green with age. Stem stout, white to pale brown, club-shaped or bulbous, with a pale net pattern (reticulation) at the top - a key identifying feature. Flesh white, unchanging when cut, with a mild nutty smell and taste. Spore print olive-brown. B. aereus is darker (almost black-brown cap), firmer, and grows in warmer oak/chestnut woodland.
Where it grows
Mycorrhizal with both broadleaf and conifer trees: oak, beech, chestnut, hazel as well as spruce and pine. Thrives at forest edges and in clearings. B. aereus is bound to oak and chestnut on warm, often lime-rich ground in southern/central Europe.
Cooking
Fried in butter is classic. Excellent dried - the aroma intensifies (dry in the oven at 25-30 C for a few hours, then raise to about 50 C until crisp; store airtight). Dried cep is soaked for 15-20 minutes; save the soaking water for stock/risotto. The basis of cepes a la bordelaise and Steinpilzrisotto.
Look-alikes
Bitter taste; dark net pattern on a pale stem and pink pores (the cep has a pale net on a brownish stem with white/yellow pores). Tasting a small piece reveals its bitterness.
Red pores and red stem, bruises blue; poisonous. General rule: avoid boletes with red pores or that bruise strongly blue.
Blues immediately when cut and has red/orange pores. Porcini flesh stays white and does not change.
The white net pattern (reticulation) on the upper stalk and the non-bluing pores distinguish Boletus edulis.
Much of the commercial Chilean "porcini" export is actually Suillus and native boletes rather than true B. edulis; the trade name is applied broadly.

Leccinum aurantiacumA robust orange-capped bolete whose flesh darkens to grey when cut; an excellent, safe beginner's find.
How to recognise it
A big, sturdy bolete dressed in one of the forest's boldest colours: the cap runs from burnt orange to brick-red, sitting atop a thick white stem roughened all over with dark, bristly scales called scabers. Cut the stem and the pale flesh turns a striking blue-grey before deepening to near-black - an arresting transformation that is perfectly normal and harmless.
Where it grows
Tied to aspen (and in some forms birch) through a lifelong mycorrhizal partnership, exchanging minerals from the soil for sugars from the tree. Look for it in mixed and deciduous woodland wherever aspens grow.
Cooking
Versatile in the kitchen: fry, stew, or marinate it. The firm flesh holds up well to pickling in vinegar, and the dramatic colour change to grey-black is entirely normal - it does not affect the flavour.

How to recognise it
A medium-sized bolete with a grey to brown cap that can reach 5-15 cm across. The stem is pale and slender - often taller than the cap is wide - and covered in fine dark scales that give it a rough, bristled look. The pore surface is white to greyish rather than gills. The flesh is white, mild, and softens on cooking, sometimes turning faintly grey or brownish.
Where it grows
Always found near birch, with which it shares a lifelong mycorrhizal partnership. The birch tree feeds it sugars; it returns water and minerals to the roots. Birch covers enormous areas of Russia and the Baltic states, and this bolete follows wherever birch is found - forest edges, roadsides, young plantations, boggy clearings.
Cooking
One of the most versatile boletes in Eastern European cooking. Slice and fry with potatoes, stir into creamy sauces, or simmer in soups and stews. It also takes well to marinating in vinegar brine, a traditional Russian and Polish way of preserving the autumn harvest.

Can resemble the birch bolete but is intensely bitter; a bitterness taste test reveals it.

Suillus luteusA classic marinating bolete; peel off the slimy cap skin before cooking.
How to recognise it
Cap 5-12+ cm, brown to grey-brown or purple-chestnut, the surface very slimy and glossy even in dry weather. Instead of gills it has pores - a sponge-like layer that is pale yellow when young and turns olive-yellow with age. Suillus luteus carries a purple ring on the stem; S. granulatus lacks the ring and weeps white latex droplets from its pores when fresh; S. bovinus has larger pores and less slime. Pale yellow flesh that does not bruise blue.
Where it grows
Found under introduced pines in plantations across south-eastern and south-western Australia - often sharing ground with the saffron milkcap at forest edges - and in New Zealand. The fungus arrived with its pine host and has no natural foothold here without it. S. granulatus favours calcareous ground under Pinus halepensis and Pinus pinea.
Cooking
Peeled and chopped in Asian-inspired soups, fried in butter, in omelettes, pasta, pies. Well suited to drying (crispy golden "half-moons") and blending into umami powder; suitable for pickling.
Look-alikes
Deadly Amanita species can grow under the same introduced trees in plantations. Unlike the bolete-type Suillus (which has yellow pores under the cap and a slimy brown cap), Amanita have gills, a ring and a basal volva.
The combination of a slimy brown cap, yellow pores and pine habitat is distinctive for the slippery jacks; following the beginner rule of picking nothing else avoids confusion.
Other Suillus boletes are also edible; the guide notes there are no dangerous lookalikes.

Lactarius resimusRanked among Russia's three finest, but sharp and bitter raw; only safe after soaking and salting.
How to recognise it
Medium-sized to large. The cap is white to cream-yellow, often faintly zoned, with an inrolled margin edged in dense woolly hairs - the most reliable field mark. When cut or bruised, the flesh bleeds a white latex that turns distinctly yellow on exposure to air, setting it apart from most other milk-caps. Spore print cream-white. Raw flesh tastes fiercely peppery and bitter - a flavour that vanishes only with correct preparation.
Where it grows
Grows in partnership with birch and pine as a mycorrhizal species, threading its mycelium through the roots of host trees in northern and mountainous mixed forests. It can run this underground relationship with a single tree for many years, which is part of why good patches come back to the same spots season after season.
Cooking
The classic soljonyje gruzdi (salted gruzdi); served with onion, sunflower oil and sour cream alongside rye bread and vodka.

How to recognise it
Cap 6-20 cm, bright orange-gold with darker concentric rings - striking even under the pine litter. Young specimens are convex with the margin curled under; with age the cap opens out to a funnel or vase shape. Gills are orange and densely packed. Cut the stem or break a gill and it immediately bleeds a clear, carrot-orange milk (latex) - the species' unmistakable calling card. Any bruising produces a telltale green discoloration. Stem hollow, 5-8 cm, pitted with orange dimples (scrobiculations). Mild, slightly peppery taste and a pleasant aromatic smell.
Where it grows
Found exclusively under introduced pines (Pinus radiata, P. pinea, P. halepensis) in plantations and pine plantings, on moist but well-drained ground beneath thick pine-needle litter. Key locations: NSW (Oberon, Blue Mountains/Hampton, Jenolan, Vulcan State Forest), Victoria (Macedon Ranges, Mornington Peninsula, Bright), SA (Mt Crawford/Adelaide Hills), Canberra; and in New Zealand under introduced pines. It arrived with the trees and has colonised wherever they were planted.
Cooking
Grill/fry quickly over high heat (otherwise they become "stewed"/tough). A classic Australian preparation: BBQ'd in a forest picnic area with olive oil, garlic, chili, parsley, served with sourdough bread. Also risotto, soup, pie, schnitzel (dipped in egg and breadcrumbs), pickling in oil/brine, drying into mushroom powder/mushroom salt.
Look-alikes
Amanita species lack the saffron-orange milk and have a volva. If the cap spots wash off and there is no orange milk, do not eat.
These lack the clear saffron color and the combination of orange latex, pine habitat and green bruising.
Greenish-tinged and less tasty, but harmless.
All edible. Only milkcaps with orange/red milk are safe here; those with white, burning milk should be avoided.

How to recognise it
Cap 3-15 cm across, honey-yellow to warm brown, often dusted with small dark scales toward the centre and faintly sticky when wet. Gills start white to cream and develop yellow-brown spots with age. Stem fibrous and tough, with a neat white ring (annulus) sitting high up. Spore print white - an essential check. Below ground the fungus extends itself through flat black rhizomorphs (bootlaces) that can travel metres under bark and soil. The mycelium itself glows with a faint greenish bioluminescence on dark nights - the foxfire of old woodland folklore.
Where it grows
A parasite and saprotroph on a broad range of deciduous and coniferous trees - oak, beech, birch, pine, and many others. It fruits in dense, overlapping clusters at stumps, trunks, and buried roots, sometimes covering an entire stump in a single spectacular flush.
Cooking
After parboiling, fry with onion and garlic, or use in stews and soups where they hold their shape well. Pickling is a traditional favourite in Eastern Europe and Italy, where they are known as chiodini - the small, firm caps are ideal for preserving in jars.
Look-alikes
Small, brown, also grows on wood and contains deadly amatoxin. Has a rust-brown spore print, whereas honey fungus has a white spore print - always take a spore print.
Deadly, contains amatoxin; also grows on wood and resembles small honey mushrooms. Take a spore print: Galerina marginata produces a rust-brown print; honey fungus produces a white print. Taste is not a reliable differentiator - Galerina also has a mild taste and must never be used as a distinguishing cue.

Cantharellus cibariusEgg-yolk yellow with blunt ridges and an apricot scent; a very safe beginner's mushroom.
How to recognise it
3-10 cm, egg-yellow to deep yellow, the whole body glowing the same warm colour from cap edge to stem. The cap starts convex and opens into a shallow funnel with a wavy, irregular margin. The underside carries blunt, branched ridges - not true gills - that run smoothly down onto the stem; this is the single most important thing to check. The flesh is white inside (not orange), firm, and carries a fruity apricot scent. Spore print pale yellow to cream-white. Remarkably resistant to maggots.
Where it grows
Mycorrhizal with deciduous and coniferous trees; it thrives in moist moss under beech and birch, as well as under oak and pine. Look on mossy banks, along ditches, and in woodland glades.
Cooking
Fried in butter; classically with eggs (fricassée de girolles, scrambled eggs). It dries poorly (becomes tough) but can be pulverised into a seasoning. Pre-boil/dry-fry first to drive off the moisture.
Look-alikes
In Europe grows on olive trees in the Mediterranean region; has true gills, grows in clusters on wood, and glows faintly. The truly dangerous double.
Can be orange-coloured; avoid confusion. Have true gills and a cobweb-like veil rather than the chanterelle's blunt decurrent folds.
More orange, with true, thin, closely spaced gills (not folds) that are forked but gill-like. Now considered edible but can cause stomach upset.
Can superficially resemble the chanterelle but has true gills and a different colour.

How to recognise it
Cap 6-10 cm, light green to grey-green or grass-green with a darker centre, sticky in wet weather, becoming paler and furrowed at the margin with age; the cap skin can be peeled off about halfway. Gills white, later yellowish-white and often brown-spotted. Stem white, often faintly brown-spotted, with no ring or stocking (volva). The flesh is brittle and chalk-like, crumbling rather than tearing - and unlike milkcaps, it releases no milky latex. Taste mild (sometimes faintly acrid when very young).
Where it grows
Mycorrhizal, living in quiet partnership mainly with birch and also spruce, in forests and parks throughout the Nordic region.
Cooking
Firm flesh, good fried, stewed or oven-baked, preferably together with more flavourful mushrooms. The green brittlegill is good cooked even though it can be somewhat acrid raw.
Look-alikes
The death cap always has a ring on the stem and a stocking/volva at the base, white gills, and can be torn into fibres; the russula has neither a ring nor a stocking and crumbles brittlely. Always pick up the whole mushroom including the stem base.

How to recognise it
A medium-sized milkcap with a pale to salmon-pink cap that shows clear concentric zones - a reliable field mark. The margin is distinctly woolly and inrolled, giving this species its common name. When you nick the flesh or stem, it bleeds white milk immediately; that milk is sharply acrid on the tongue, which is all the warning you need not to eat it raw.
Where it grows
Strictly tied to birch - it lives its whole life in a mycorrhizal partnership with birch roots, growing on moist, acidic soils in birch woodland and mixed birch-conifer forest. No birch, no woolly milkcap.
Cooking
In Russia and Finland, properly prepared woolly milkcaps are fermented in salt - solyonye volnushki - and served as a cold zakuska (appetizer). The result, after all that soaking and salting, is pleasantly firm with a mild, slightly sour flavour: a world away from the fiery raw mushroom.
Danger
Not life-threatening, but causes painful mouth blisters and severe gastric irritation if eaten raw; safe only after proper processing.

Amanita phalloidesThe deadliest mushroom in the region; learn its volva, ring and white gills before all others.
How to recognise it
Cap 40-160 mm, hemispherical, becoming convex, then flat, smooth, slimy in wet conditions and glossy when dry; most often pale yellow/greenish to pale brown, but can be almost white (colour is not a reliable feature). White gills, a white stem, a membranous ring, and a sac-like volva at the base. Amyloid spores (white spore print).
Where it grows
Found only under exotic/introduced trees, especially oak (Quercus), also in gardens, lawns and parks. In Australia it has only been recorded in SA, Victoria and the ACT (Canberra). In Victoria it is widespread across Melbourne (Kew, Camberwell, South Yarra and others) and regionally (Bendigo, Bright, Castlemaine). In New Zealand it grows under introduced oaks and chestnuts; it has also been reported in association with Leptospermum/Kunzea (potentially invasive). There are no confirmed finds in undisturbed native forest.
Cooking
Not edible under any circumstances. The toxins are not inactivated by cooking, drying, freezing or soaking.
Danger
World's deadliest mushroom; as little as half a cap can kill an adult human. Documented fatalities: Canberra, New Year's Eve 2011/2012 - cook Liu Jun picked death caps in Braddon (mistaking them for straw mushrooms) and put them in a stir fry; he and the kitchen hand Tsou Hsiang (a 52-year-old Chinese national) died, of four poisoned. According to the Canberra Times there have been in total "four fatalities and 12 reported incidents of poisoning associated with death cap mushrooms in the ACT". Of nine poisoned in the Canberra region 1988-2011, three were from Laos and two from China. Leongatha, Victoria, July 2023: Erin Patterson, 50, served death caps in individual Beef Wellingtons; Don Patterson, Gail Patterson and Heather Wilkinson died, while Ian Wilkinson survived. She was convicted on 7 July 2025 of three murders and one attempted murder, and on 8 September 2025 sentenced by Justice Christopher Beale to three concurrent life sentences with a 33-year minimum (plus 25 years for the attempted murder), parole no earlier than 2056; Beale found the murders required "substantial premeditation" and an "elaborate cover-up". (The conviction is under appeal.)
Look-alikes
The fully white form of the death cap resembles the white Amanita; both are deadly. Treat any white gilled mushroom with a ring and a sac-like volva as lethal.
Edible Asian mushroom that has caused several deaths among East/Southeast Asian migrants through confusion with the death cap. Both have a volva; check gill colour (straw mushroom develops pink to brown gills and a pink spore print, whereas the death cap has white gills and a white amyloid spore print).
Edible Amanita that can be confused with the death cap; distinguish by colour and spore features, but never rely on colour alone.
Agaricus species have pink-to-brown gills and a dark spore print and lack a volva, whereas the death cap has white gills, a white spore print and a sac-like volva at the base.

How to recognise it
Entirely white from cap to base, with no colour change anywhere on the fungus. The cap (5-12 cm) begins egg-shaped or conical, then expands to a dome with a low central bump; the surface is often faintly sticky. Gills are white and free from the stem. The stem is white and fibrous, sometimes gently curved, with a fragile ring sitting fairly high up and a distinct sac-like white volva at the base - this volva is often buried in soil or leaf litter and easily missed. Spore print white. KOH applied to the cap gives a yellow reaction. Mature specimens develop a faint, slightly unpleasant smell.
Where it grows
Mycorrhizal with deciduous trees (beech, oak, chestnut) and conifers; damp, mossy woodland, often on acidic ground.
Cooking
Amanita virosa must never be eaten under any circumstances. No method of preparation - boiling, frying, drying, parboiling, or prolonged cooking - destroys or reduces its amatoxins to a safe level. The reason is fundamental: amatoxins are small, heat-stable bicyclic peptides. They survive temperatures that denature proteins and are not broken down by stomach acid or intestinal enzymes. Discarding the cooking water does nothing, because amatoxins are water-soluble and the broth simply becomes a concentrated toxin solution. There is no culinary workaround. Any food prepared in the same pan, or mixed with fragments of this mushroom, must also be discarded. If ingestion is suspected, contact emergency services and a poison control centre immediately - do not wait for symptoms, because the onset is delayed and the window for effective intervention is narrow.

How to recognise it
A medium-sized autumn mushroom with a reddish-brown to rust-orange cap and rust-brown gills - those rust tones run through the whole fruiting body. In young specimens, a fine cobweb-like veil called the cortina stretches between cap edge and stem; as the cap opens and the cortina breaks, it leaves a rusty girdle on the stem. The related C. rubellus (sometimes treated as a synonym) has a noticeably conical cap.
Where it grows
Grows in coniferous and mixed forest, living as a mycorrhizal partner with trees. The partnership can be long-lived; the mycelium threads through the soil for years, returning each autumn when conditions are right.
Cooking
Cortinarius orellanus must never be eaten under any circumstances. No cooking technique - boiling, frying, drying, parboiling, or prolonged heating - destroys or neutralises orellanine. The toxin is a highly stable dipyridyl compound that is heat-resistant and water-soluble only to a limited degree; discarding cooking water does not make the mushroom safe. There is no antidote, and by the time symptoms of kidney damage appear (typically four to fifteen days after eating), significant and often irreversible nephrotoxic injury has already occurred. Treatment is supportive: dialysis for weeks or months, and in severe cases a kidney transplant. Because of the extreme latency, victims rarely connect the meal to the illness without a careful dietary history taken in hospital. The lesson is not 'cook it differently' - the lesson is that this species is incompatible with food, full stop.

Confused with chanterelles and brittlegills (Russula) by inexperienced foragers; has led to deaths. The long latency makes the link to the mushroom easy to overlook.

How to recognise it
Small - cap 1-4 (-5) cm, honey- to yellow-brown, hygrophanous (dark brown when moist, pale yellow when dry), smooth. Gills brownish, giving a rust-brown spore print. Stem thin with a (often disappearing) ring; darkens towards the base. Grows on wood.
Where it grows
Saprotroph on dead wood (deciduous and coniferous), on rotting logs and stumps, often in moss; from the lowlands to alpine settings.
Cooking
Galerina marginata must never be eaten. There is no preparation method - boiling, parboiling, frying, drying, or any other technique - that destroys or neutralises its amatoxins. Alpha- and beta-amanitin are heat-stable proteins: they survive cooking temperatures completely intact and are absorbed unchanged through the gut. Eating even a single cooked cap can cause fatal liver and kidney failure. The insidious danger is a deceptive latency period of 6-24 hours during which no symptoms appear, followed by violent gastrointestinal illness, a brief false recovery, and then organ failure within days. By the time symptoms are undeniable, irreversible damage has already begun. This species has killed people who deliberately ate what they believed were edible wood-growing mushrooms and who had removed or discarded the ring as an unimportant detail. If there is any possibility that this species entered a dish, seek emergency medical care immediately - do not wait for symptoms.

Irregular, brain- or walnut-shaped cap, reddish-brown to dark brown - wrinkled and convoluted rather than pitted in a honeycomb. The stem is short; the interior is hollow or chambered, not cleanly hollow throughout.

Sandy coniferous forest floor, especially under pine. Also turns up on burned ground and other disturbed soils where the forest floor has been opened up.

In the Nordic countries and Eastern Europe it is traditionally eaten after repeated parboiling, but this is considered risky - the toxin content is reduced but not entirely eliminated, and the vapors are poisonous.

How to recognise it
A sulphur-yellow to yellow-green cap with a rusty red-brown center, growing in tight, sometimes enormous clusters. The gills open greenish-yellow and steadily deepen through olive-green to near-black as the mushroom matures. There is no ring on the stem. Raw flesh touched to the tongue is intensely bitter - a taste that lingers and is unmistakable.
Where it grows
Fruits from stumps, buried roots, and rotting logs of deciduous trees, though it also appears on conifer wood. It is a wood-decay fungus that can colonise a single stump with dozens of tightly packed fruiting bodies at once.
Cooking
The sulphur tuft must never be eaten, and no cooking method - boiling, parboiling, frying, drying, or pickling - makes it safe. The toxins responsible, fasciculols, are not fully destroyed by heat. In practice, the mushroom's ferociously bitter taste makes eating a meaningful quantity difficult, but taste alone is not a reliable safety net: symptoms can appear after even a small amount, and the 5-10 hour delay means a person may eat a full meal before any warning sign appears. If sulphur tufts have accidentally been cooked together with honey mushrooms, discard the entire dish - the bitter compounds leach into the cooking liquid and contaminate otherwise edible mushrooms in the pot. If you suspect you or someone else has eaten this species, do not wait for symptoms: contact Poison Control or emergency services immediately and take a photo of the mushroom or bring a specimen.

Paxillus involutus must never be eaten. No method of preparation - boiling, frying, drying, pickling, parboiling, or any other treatment - makes it safe. The reason is twofold. First, the mushroom contains heat-labile gastrointestinal toxins that cause gastroenteritis if it is undercooked, but these are the lesser concern. Second, and critically, it contains antigens that survive cooking intact. With repeated consumption the immune system can develop IgG antibodies against these antigens; on a subsequent meal, immune complexes form and trigger an attack on the body's own red blood cells (immune-mediated hemolytic anemia). This sensitization mechanism is cumulative and unpredictable: no amount of preparation removes the antigens, and a person who has eaten it many times without symptoms is not safe - they may be at higher risk, not lower. Treat it as the deadly species it is and keep it out of the kitchen entirely.
Danger
Paxillus syndrome can lead to acute hemolytic anemia, kidney failure, disseminated intravascular coagulation (DIC), and death. Treatment is supportive, possibly plasma exchange.

How to recognise it
One of Europe's most imposing boletes: cap 8-30 cm (occasionally to 50 cm), pale greyish-white to beige, with a smooth, dry, velvety surface. The pores are a vivid red to orange-red - a striking contrast to the pale cap - and the stem is thick, bulbous and covered in a crimson net-like pattern (reticulation). Cut the flesh and it stains blue almost instantly, a reaction caused by oxidation of the pigment variegatic acid. Older specimens develop a distinctive, unpleasant smell of carrion. Spore print olive-brown.
Where it grows
A thermophilic mycorrhizal partner of oak, beech and chestnut, rooted in warm, calcareous (lime-rich) soil. Largely a species of southern and central Europe; in the UK confined to southern England, absent from colder northern forests.
Cooking
Not a food mushroom. This species is poisonous and should not be eaten.
Danger
Causes severe gastroenteritis with violent vomiting, abdominal pain and sometimes bloody diarrhoea within hours. Especially poisonous raw. According to Oberlin et al. (Ann Toxicol Anal 25(1):13-16, 2013), in summer 2011 in southern France "184 cases of Devil's bolete poisoning... called into Poison Control" were reported. No confirmed deaths in the UK, but serious.

The cep has white/yellow pores, a light-coloured net, and does not blue; the devil's bolete has red pores, a red net-stem and blueing flesh.

Inexperienced foragers may mistake the pale cap for a porcini until they notice the red pores; the porcini has whitish to olive (never red) pores and does not have a red-networked stem.
Edible porcini have pale pores, a pale stem, and white flesh that does not turn blue. Red pores plus blue-staining flesh indicate the devil's bolete.
The rules that save lives
- Volva + ring + white gills = mortal danger. Always dig out the stem base; the death cap and destroying angel hide their volva in the soil.
- Pick no small brown wood mushrooms (openok) without three checks: white spore print, a ring and a mild taste, against deadly Galerina and bitter ringless sulphur tuft.
- Bitter milk-caps (gruzdi, volnushki) must be soaked or boiled and salted, never eaten raw; saffron milk-cap and mild milk-caps are the exceptions.
- Do not eat brown roll-rim (svinushka) despite old tradition, and beginners should avoid the false morel.
- Long latency deceives: amatoxins (6-24 h), gyromitrin and especially orellanine (days to weeks) act late. Seek care even if you feel well after a suspect meal.
- Botulism is the biggest practical danger: salt and dry by open methods, never seal preserves airtight, and store cold.
- When in any doubt about a mushroom, leave it; use Poland's free Sanepid checking stations where available.
