ChanterelleTen edibles a Nordic forager most often fills the basket with, and seven dangerous species to learn to avoid. The spirit here is calm and honest: most are good and fairly easy to learn, yet several have look-alikes ranging from tasteless to deadly. This guide teaches recognition, never a guarantee of edibility.
What matters most
- The chanterelle (Cantharellus cibarius) is the beginner's safest edible - no deadly look-alikes in the Nordics, and recognised by its ridges, not gills.
- The deadliest trap is white mushrooms with white gills: the destroying angel and death cap mimic champignons and the green russula.
- Three toxin groups dominate serious poisonings: amatoxin (liver), orellanine (kidneys), and gyromitrin - and their symptoms arrive late, after the organ damage has begun.
- Reclassified 'classics': the brown roll-rim (Paxillus involutus) is now considered poisonous, and the false morel (Gyromitra esculenta) is fully discouraged by the Swedish Food Agency.
- Correct handling matters as much as correct species - much 'mushroom poisoning' is really old, badly stored or undercooked edible mushroom.
- Pick funnel chanterelles and russulas one at a time and inspect each - this is where the most serious Swedish poisonings happen.
The great toxin groups
Poisonous mushrooms are grouped by their toxins. The most dangerous are the cytotoxins, because symptoms often arrive late - by which time the organ damage is usually already done.
The toxin of the destroying angel, death cap and funeral bell. It kills cells in the liver and gut lining. Symptoms appear only after 8-24 hours: intense watery diarrhoea and vomiting, then liver failure. The lethal dose is tiny - in practice a single mushroom - and all Swedish mushroom-poisoning deaths so far have involved an amatoxin Amanita.
Found in the deadly webcaps; not destroyed by cooking or freezing. Symptoms come very late, 2-7 (up to 14) days: thirst, fatigue, headache, nausea, back and abdominal pain, then falling urine output and kidney failure that is often permanent.
The toxin of the false morel, converted in the stomach to methylhydrazine (the same class of compound as rocket fuel). Cytotoxic to liver, nervous system and red blood cells, and carcinogenic in animal studies. Symptoms appear after 5-8 hours; the cooking vapours are toxic too.
Muscarine, ibotenic acid and muscimol act on the nervous system rather than destroying cells. In the fly agaric they cause dizziness, confusion, agitation and sometimes hallucinations within half an hour to two hours - rarely life-threatening for adults, but more dangerous for children and pets.

Cantharellus cibariusThe beginner's safest edible - golden all over, with branching ridges and an apricot scent.
How to recognise it
3-10 cm, egg-yellow to deep yellow, the whole body glowing the same warm colour from cap edge to stem. The cap starts convex and opens into a shallow funnel with a wavy, irregular margin. The underside carries blunt, branched ridges - not true gills - that run smoothly down onto the stem; this is the single most important thing to check. The flesh is white inside (not orange), firm, and carries a fruity apricot scent. Spore print pale yellow to cream-white. Remarkably resistant to maggots.
Where it grows
Mycorrhizal with deciduous and coniferous trees; it thrives in moist moss under beech and birch, as well as under oak and pine. Look on mossy banks, along ditches, and in woodland glades.
Cooking
Fried in butter; classically with eggs (fricassée de girolles, scrambled eggs). It dries poorly (becomes tough) but can be pulverised into a seasoning. Pre-boil/dry-fry first to drive off the moisture.
Look-alikes
In Europe grows on olive trees in the Mediterranean region; has true gills, grows in clusters on wood, and glows faintly. The truly dangerous double.
Can be orange-coloured; avoid confusion. Have true gills and a cobweb-like veil rather than the chanterelle's blunt decurrent folds.
More orange, with true, thin, closely spaced gills (not folds) that are forked but gill-like. Now considered edible but can cause stomach upset.
Can superficially resemble the chanterelle but has true gills and a different colour.

Boletus edulisA meaty brown bolete with pores instead of gills and a fine white network on the stem.
How to recognise it
Cap 7-30 cm, brown (penny-bun coloured), slightly tacky when wet, domed when young and flattening out. Instead of gills there is a tube layer (pores) under the cap: white when young, turning yellow-green with age. Stem stout, white to pale brown, club-shaped or bulbous, with a pale net pattern (reticulation) at the top - a key identifying feature. Flesh white, unchanging when cut, with a mild nutty smell and taste. Spore print olive-brown. B. aereus is darker (almost black-brown cap), firmer, and grows in warmer oak/chestnut woodland.
Where it grows
Mycorrhizal with both broadleaf and conifer trees: oak, beech, chestnut, hazel as well as spruce and pine. Thrives at forest edges and in clearings. B. aereus is bound to oak and chestnut on warm, often lime-rich ground in southern/central Europe.
Cooking
Fried in butter is classic. Excellent dried - the aroma intensifies (dry in the oven at 25-30 C for a few hours, then raise to about 50 C until crisp; store airtight). Dried cep is soaked for 15-20 minutes; save the soaking water for stock/risotto. The basis of cepes a la bordelaise and Steinpilzrisotto.
Look-alikes
Bitter taste; dark net pattern on a pale stem and pink pores (the cep has a pale net on a brownish stem with white/yellow pores). Tasting a small piece reveals its bitterness.
Red pores and red stem, bruises blue; poisonous. General rule: avoid boletes with red pores or that bruise strongly blue.
Blues immediately when cut and has red/orange pores. Porcini flesh stays white and does not change.
The white net pattern (reticulation) on the upper stalk and the non-bluing pores distinguish Boletus edulis.
Much of the commercial Chilean "porcini" export is actually Suillus and native boletes rather than true B. edulis; the trade name is applied broadly.

Craterellus tubaeformisA late-season favourite found in carpets - but inspect each one, as it shares its habitat with the deadly webcap.
How to recognise it
A slender, funnel-shaped cap 2-6 cm across, yellow-brown to grey-brown or near black-brown on top - colours that shift with age and moisture. The underside has sparse, grey-yellow, branching ridges that run smoothly down onto the stem. Most distinctive of all: the stem is hollow, yellow to yellow-brown, a tube you can confirm just by snapping it. Mild smell with a faint nutty edge.
Where it grows
Mossy coniferous and mixed forest, favouring damp hollows and spruce stands where sphagnum holds moisture. Mycorrhizal - its mycelium threads quietly through the soil, in a partnership with the tree roots around it that may have been running for decades. Common in southern and central Sweden.
Cooking
Mild and faintly peppery, with a flavour that deepens with drying. Works well in soups, sauces, stews and risotto - and because it dries so cleanly, it is worth laying some aside for winter.
Look-alikes
The deadly webcap has a pointed cap and red-brown gills; the yellowfoot has branched ridges (not true gills) and a hollow stem. Confusion arises only through carelessness, as they grow in similar damp environments.
Harmless; has a gelatinous "cap" and is not funnel-shaped.
Harmless relative with a similar overall form.
Golden chanterelle has a solid white interior, whereas yellowfoot has a hollow tube with bright yellow-orange walls.

Craterellus cornucopioidesSooty-black and hollow with a smooth underside - one of the world's best mushrooms to dry, almost truffle-like.
How to recognise it
Trumpet- or funnel-shaped, 5-12 cm tall, completely hollow, thin-fleshed and brittle, dark grey to blackish-brown (sometimes yellowish). The outer/underside is a paler grey with faint decurrent ridges (not true gills). Spore print white/pale yellow. A rich, smoky scent, especially when dried. The name "trumpet of death" refers to its colour and late season - not to any toxicity.
Where it grows
Mycorrhizal in deciduous woodland, in leaf litter under beech, oak and especially hornbeam (Carpinus betulus), preferably in moss.
Cooking
Fried; works excellently in cream and wine sauces, with game and in pasta. Dries very well - the aroma becomes deeper; can be ground to a powder for seasoning.
Look-alikes
A darker trumpet chanterelle but with a yellow stem; edible.
Can resemble it superficially; differs in form and colour.
Edible; the only similar species.

Lactarius deterrimusThe milkcaps whose carrot-orange milk turns green are good edibles - the golden rule that keeps them safe.
How to recognise it
Cap 5-12 cm, convex at first then gradually funnel-shaped, orange with concentric zones; older caps develop greyish-green patches where the flesh has been exposed or bruised. The gills are orange but stain green when damaged. The stem is hollow and orange, usually pitted with pale spots. The most distinctive feature: cut or snap the flesh and it bleeds carrot-orange milk that slowly turns green over the next few minutes - a reliable identity marker you can confirm in the field.
Where it grows
The false saffron milkcap lives as a mycorrhizal partner with spruce, exchanging soil minerals for sugars in a partnership that can persist for many years. It grows under spruce throughout Sweden. Its close relative the pine saffron milkcap (Lactarius deliciosus) prefers pine on lime-rich ground and is found mainly in southern Sweden.
Cooking
Firm-textured and well-suited to frying. It has a fairly strong flavour and works well mixed with milder mushrooms. If drying, keep the temperature low - around 25-30 °C - to avoid bitterness developing.
Look-alikes
Has white, acrid milk and a woolly, fringed cap margin, unlike the carrot-orange milk of the saffron milkcaps.

Albatrellus ovinusA safe beginner's mushroom with no poisonous look-alike, found in large gatherings in mossy conifer woods.
How to recognise it
Fleshy cap 5-20 cm, white to grey-brown, becoming yellow-spotted with age and developing a slightly cracked, almost scaly surface. Underneath, a white pore layer - often dotted lemon-yellow - runs down onto the pale stem. The flesh is white with a faint lemon-yellow or greenish-yellow cast, mild in taste and pleasantly aromatic.
Where it grows
Mossy coniferous forest, mycorrhizal chiefly with spruce. Common across most of Sweden, though rare in the northernmost and southernmost parts. Often in large aggregations.
Cooking
A versatile mixer that soaks up the flavour of stronger mushrooms alongside it - fry with onion and it shines. Takes well to drying, and many foragers find the dried version more intense and rewarding than fresh.

Suillus variegatusA freckled pine-wood bolete; dried, it is said to taste like the false morel - a safe alternative to it.
How to recognise it
Cap 5-15 cm, yellow-brown to olive-brown, dry and matte with small darker scales - the "freckles" that give this bolete its variegated character and make it straightforward to identify. Beneath the cap the pore surface is yellowish to olive-brown. The stem is light brown to yellow-brown, smooth, with no ring or net pattern. Slice the flesh and it often flushes noticeably blue - a reliable confirmation you have the right mushroom. Fresh specimens carry a faint sour, acidic odour.
Where it grows
At home in lime-poor coniferous forest where pine dominates - from mossy forest floors to lichen-covered rocky outcrops. It lives as a mycorrhizal partner of pine, its mycelium woven through the root system in a long-standing exchange that sustains both fungus and tree. Common throughout Sweden, and the provincial mushroom of Dalarna.
Cooking
Drying is where the velvet bolete really comes into its own. Dried, it develops a deep, slightly nutty flavour that is said to resemble false morel (Gyromitra esculenta) - without any of the toxicity. Slice thinly and dry at low heat until completely crisp. Rehydrated or ground to a powder, it is a fine addition to soups, stews, and sauces.

Suillus luteusAlways peel off the slimy cap skin before cooking - it can upset the stomach and spoil other mushrooms in the basket.
How to recognise it
Cap 5-12+ cm, brown to grey-brown or purple-chestnut, the surface very slimy and glossy even in dry weather. Instead of gills it has pores - a sponge-like layer that is pale yellow when young and turns olive-yellow with age. Suillus luteus carries a purple ring on the stem; S. granulatus lacks the ring and weeps white latex droplets from its pores when fresh; S. bovinus has larger pores and less slime. Pale yellow flesh that does not bruise blue.
Where it grows
Found under introduced pines in plantations across south-eastern and south-western Australia - often sharing ground with the saffron milkcap at forest edges - and in New Zealand. The fungus arrived with its pine host and has no natural foothold here without it. S. granulatus favours calcareous ground under Pinus halepensis and Pinus pinea.
Cooking
Peeled and chopped in Asian-inspired soups, fried in butter, in omelettes, pasta, pies. Well suited to drying (crispy golden "half-moons") and blending into umami powder; suitable for pickling.
Look-alikes
Deadly Amanita species can grow under the same introduced trees in plantations. Unlike the bolete-type Suillus (which has yellow pores under the cap and a slimy brown cap), Amanita have gills, a ring and a basal volva.
The combination of a slimy brown cap, yellow pores and pine habitat is distinctive for the slippery jacks; following the beginner rule of picking nothing else avoids confusion.
Other Suillus boletes are also edible; the guide notes there are no dangerous lookalikes.

Leccinum versipelleA fine young edible from under birch - but it must be cooked long and thoroughly, never raw.
How to recognise it
The cap is convex and smooth, orange to brick-red or red-brown, occasionally finely scaly, with the cap skin overhanging the margin. The long stem is covered in dark felty tufts - characteristically black at the tips - which makes it easy to distinguish from other boletes at a glance. Pores are dirty white. The flesh is white when cut, then slowly greys and darkens.
Where it grows
A true birch partner, living in mycorrhizal symbiosis with birch roots for years before producing a single fruiting body. Look for it wherever birches stand - forest edges, open birch woods, boggy birch scrub. Common in most of Sweden and the provincial mushroom of Lappland.
Cooking
Cook for a long time - this is not a mushroom to rush. It holds up well in stews and braises where the heat can do its work, and it dries well for later use.

Another rough-stemmed bolete; edible when well cooked.

Russula aerugineaAll mild russulas are edible - but you must be able to tell a russula's brittle, ringless flesh from the deadly death cap.
How to recognise it
Cap 6-10 cm, light green to grey-green or grass-green with a darker centre, sticky in wet weather, becoming paler and furrowed at the margin with age; the cap skin can be peeled off about halfway. Gills white, later yellowish-white and often brown-spotted. Stem white, often faintly brown-spotted, with no ring or stocking (volva). The flesh is brittle and chalk-like, crumbling rather than tearing - and unlike milkcaps, it releases no milky latex. Taste mild (sometimes faintly acrid when very young).
Where it grows
Mycorrhizal, living in quiet partnership mainly with birch and also spruce, in forests and parks throughout the Nordic region.
Cooking
Firm flesh, good fried, stewed or oven-baked, preferably together with more flavourful mushrooms. The green brittlegill is good cooked even though it can be somewhat acrid raw.
Look-alikes
The death cap always has a ring on the stem and a stocking/volva at the base, white gills, and can be torn into fibres; the russula has neither a ring nor a stocking and crumbles brittlely. Always pick up the whole mushroom including the stem base.
Milkcaps exude a milky latex when broken; the green brittlegill has no latex.

Amanita virosaPure white, deadly, and reportedly tasty - it cannot be detected by taste. Never eat a white mushroom with white gills.
How to recognise it
Entirely white from cap to base, with no colour change anywhere on the fungus. The cap (5-12 cm) begins egg-shaped or conical, then expands to a dome with a low central bump; the surface is often faintly sticky. Gills are white and free from the stem. The stem is white and fibrous, sometimes gently curved, with a fragile ring sitting fairly high up and a distinct sac-like white volva at the base - this volva is often buried in soil or leaf litter and easily missed. Spore print white. KOH applied to the cap gives a yellow reaction. Mature specimens develop a faint, slightly unpleasant smell.
Where it grows
Mycorrhizal with deciduous trees (beech, oak, chestnut) and conifers; damp, mossy woodland, often on acidic ground.
Cooking
Amanita virosa must never be eaten under any circumstances. No method of preparation - boiling, frying, drying, parboiling, or prolonged cooking - destroys or reduces its amatoxins to a safe level. The reason is fundamental: amatoxins are small, heat-stable bicyclic peptides. They survive temperatures that denature proteins and are not broken down by stomach acid or intestinal enzymes. Discarding the cooking water does nothing, because amatoxins are water-soluble and the broth simply becomes a concentrated toxin solution. There is no culinary workaround. Any food prepared in the same pan, or mixed with fragments of this mushroom, must also be discarded. If ingestion is suspected, contact emergency services and a poison control centre immediately - do not wait for symptoms, because the onset is delayed and the window for effective intervention is narrow.
Danger
As deadly as the death cap; a single cap can kill. The same treacherous course with latency and false improvement.
Look-alikes
Both are deadly Amanitas with the same amatoxins; the death cap is typically greenish rather than entirely white. Any Amanita with a volva should never be eaten.
Agaricus has pink to brown gills and a brown spore print, and no volva; the destroying angel is all white with white free gills that do not darken and a sac-like volva.
Cut lengthwise - a young Amanita egg shows the outlines of a cap and gills and has a volva, while a puffball is solid and uniform inside.
Edible Agaricus species develop dark gills as they mature, whereas the destroying angel keeps white gills and has a volva.
Young white puffballs are solid spheres without gills, ring, or volva; cutting one open reveals a uniform interior rather than the developing mushroom of an Amanita.
Gurumelo flesh reddens when scraped and smells of earth; the white destroying angels stay white and do not oxidize.
Young Agaricus lack a sac-like volva; the destroying angels have a white sac volva at the stem base.
Immature egg-stage Amanitas of various species can look similar; slice lengthwise to reveal the developing structure and avoid all-white forms with a volva.

Amanita phalloidesSweden's deadliest mushroom; its commonest trap is the green russula. Always lift the whole stem base - the volva can hide in the soil.
How to recognise it
Cap 40-160 mm, hemispherical, becoming convex, then flat, smooth, slimy in wet conditions and glossy when dry; most often pale yellow/greenish to pale brown, but can be almost white (colour is not a reliable feature). White gills, a white stem, a membranous ring, and a sac-like volva at the base. Amyloid spores (white spore print).
Where it grows
Found only under exotic/introduced trees, especially oak (Quercus), also in gardens, lawns and parks. In Australia it has only been recorded in SA, Victoria and the ACT (Canberra). In Victoria it is widespread across Melbourne (Kew, Camberwell, South Yarra and others) and regionally (Bendigo, Bright, Castlemaine). In New Zealand it grows under introduced oaks and chestnuts; it has also been reported in association with Leptospermum/Kunzea (potentially invasive). There are no confirmed finds in undisturbed native forest.
Cooking
Not edible under any circumstances. The toxins are not inactivated by cooking, drying, freezing or soaking.
Danger
World's deadliest mushroom; as little as half a cap can kill an adult human. Documented fatalities: Canberra, New Year's Eve 2011/2012 - cook Liu Jun picked death caps in Braddon (mistaking them for straw mushrooms) and put them in a stir fry; he and the kitchen hand Tsou Hsiang (a 52-year-old Chinese national) died, of four poisoned. According to the Canberra Times there have been in total "four fatalities and 12 reported incidents of poisoning associated with death cap mushrooms in the ACT". Of nine poisoned in the Canberra region 1988-2011, three were from Laos and two from China. Leongatha, Victoria, July 2023: Erin Patterson, 50, served death caps in individual Beef Wellingtons; Don Patterson, Gail Patterson and Heather Wilkinson died, while Ian Wilkinson survived. She was convicted on 7 July 2025 of three murders and one attempted murder, and on 8 September 2025 sentenced by Justice Christopher Beale to three concurrent life sentences with a 33-year minimum (plus 25 years for the attempted murder), parole no earlier than 2056; Beale found the murders required "substantial premeditation" and an "elaborate cover-up". (The conviction is under appeal.)
Look-alikes
The fully white form of the death cap resembles the white Amanita; both are deadly. Treat any white gilled mushroom with a ring and a sac-like volva as lethal.
Edible Asian mushroom that has caused several deaths among East/Southeast Asian migrants through confusion with the death cap. Both have a volva; check gill colour (straw mushroom develops pink to brown gills and a pink spore print, whereas the death cap has white gills and a white amyloid spore print).
Edible Amanita that can be confused with the death cap; distinguish by colour and spore features, but never rely on colour alone.
Agaricus species have pink-to-brown gills and a dark spore print and lack a volva, whereas the death cap has white gills, a white spore print and a sac-like volva at the base.
Native species (A. austrophalloides, A. marmorata, A. murina, A. murinaster) with a sac-like volva, ring and amyloid spores are untested but likely toxic; do not eat.
Young death cap buttons resemble Agaricus and puffballs, but Agaricus has pink to chocolate-brown gills, a brown spore print and no volva; the death cap always has white gills, a white spore print and a sac-like volva.
The green/greenish-yellow death cap form can be confused with green Russula species; check for the white free gills, ring and sac-like volva, which Russula lacks.
Russulas lack a volva and a ring; always dig up the base to check for the sac-like volva and look for the skirt-like ring and white free gills of the Death Cap.
Agaricus has pink to brown gills (not white) and no volva; the Death Cap has white free gills and a sac-like volva at the stem base.

How to recognise it
Cap 3-8 cm, reddish-brown to cinnamon-brown or orange-brown, with a characteristic pointed umbo - C. rubellus keeps this point even at maturity, unlike most mushroom caps that flatten as they age. Surface dry and fibrous. Gills sparse and widely spaced, rust-brown. Stem yellow-brown, often marked with yellow veil bands - the remnants of the cobweb-like cortina that all young Cortinarius mushrooms carry stretched between cap and stem. Take a spore print: it will be rust-brown, a key identifying feature.
Where it grows
Mycorrhizal in coniferous and mixed forest, living in an unseen root partnership with its host tree. C. rubellus grows with spruce on moist ground; C. orellanus with broadleaf trees and oak on drier ground.
Cooking
Not edible under any circumstances. The toxin is not destroyed by cooking, drying or freezing.
Danger
Orellanine gives a very long latency (2 days to 3 weeks) - no, or only flu-like, early symptoms, then kidney failure. In a western Swedish cohort 1979-2012 (Nilsson et al., BMC Nephrology 2017), 28 cases with medical records were included out of a total of 39 poisonings by the deadly webcap (toppig giftspindling); "22 of 28 patients developed acute kidney injury requiring dialysis." There is no specific antidote; treatment is dialysis, sometimes transplantation. The toxin is not destroyed by cooking, drying or freezing.

A close relative that is likewise deadly, also containing orellanine.
The orange/reddish-brown colour can tempt chanterelle pickers. The webcap has true sparse rust-brown gills, a rust-brown spore print, a cobweb-like cortina when young and yellow veil bands on the stem, whereas the chanterelle has blunt, forked, decurrent false gills (ridges), a paler spore print and no cortina.
Check for the rust-brown spore print, rust-brown gills, the cobweb-like cortina and the yellow-brown stem with yellow veil bands, which together identify a deadly webcap.
Shares the same habitat, so they are easily confused. Inspect each mushroom: the deadly webcap has a pointed cap and true gills, whereas the funnel chanterelle has ridges (false gills) and a hollow stem.

How to recognise it
Cap 8-20 cm, vivid red with white warts that can be washed off by rain or simply fade with age, leaving a plain orange-red cap. White gills, white stem with a pendant ring, and a white bag-like volva at the base. Young specimens emerge as white "eggs" wrapped in a universal veil before the red cap breaks through.
Where it grows
Introduced to Australia and New Zealand alongside pine and birch plantations, where it has since formed mycorrhizal relationships with native southern beech (Nothofagus, including Myrtle Beech N. cunninghamii) in Victoria, Tasmania and New Zealand - spreading into ecosystems it was never meant to reach and displacing native fungi as it goes. Range is expanding northwards (towards Port Macquarie, NSW); also found under silver birch in Manjimup, WA (2010).

The guide advises beginners to avoid the entire Amanita genus; faded specimens of the fly agaric can mislead the inexperienced, and the genus includes deadly amatoxin-containing species.

Caesar's mushroom (edible, southern Europe) has a yellow cap, yellow gills and yellow stem; a young rain-washed fly agaric lacking warts could theoretically be confused with it, but the fly agaric has white gills and white stem.
At the button stage the fly agaric is a white ball that can resemble a puffball; cut it lengthwise to reveal the developing cap, gills and stem of the agaric.

How to recognise it
Small - cap 1-4 (-5) cm, honey- to yellow-brown, hygrophanous (dark brown when moist, pale yellow when dry), smooth. Gills brownish, giving a rust-brown spore print. Stem thin with a (often disappearing) ring; darkens towards the base. Grows on wood.
Where it grows
Saprotroph on dead wood (deciduous and coniferous), on rotting logs and stumps, often in moss; from the lowlands to alpine settings.
Cooking
Galerina marginata must never be eaten. There is no preparation method - boiling, parboiling, frying, drying, or any other technique - that destroys or neutralises its amatoxins. Alpha- and beta-amanitin are heat-stable proteins: they survive cooking temperatures completely intact and are absorbed unchanged through the gut. Eating even a single cooked cap can cause fatal liver and kidney failure. The insidious danger is a deceptive latency period of 6-24 hours during which no symptoms appear, followed by violent gastrointestinal illness, a brief false recovery, and then organ failure within days. By the time symptoms are undeniable, irreversible damage has already begun. This species has killed people who deliberately ate what they believed were edible wood-growing mushrooms and who had removed or discarded the ring as an unimportant detail. If there is any possibility that this species entered a dish, seek emergency medical care immediately - do not wait for symptoms.

Cooking
Paxillus involutus must never be eaten. No method of preparation - boiling, frying, drying, pickling, parboiling, or any other treatment - makes it safe. The reason is twofold. First, the mushroom contains heat-labile gastrointestinal toxins that cause gastroenteritis if it is undercooked, but these are the lesser concern. Second, and critically, it contains antigens that survive cooking intact. With repeated consumption the immune system can develop IgG antibodies against these antigens; on a subsequent meal, immune complexes form and trigger an attack on the body's own red blood cells (immune-mediated hemolytic anemia). This sensitization mechanism is cumulative and unpredictable: no amount of preparation removes the antigens, and a person who has eaten it many times without symptoms is not safe - they may be at higher risk, not lower. Treat it as the deadly species it is and keep it out of the kitchen entirely.
Danger
Paxillus syndrome can lead to acute hemolytic anemia, kidney failure, disseminated intravascular coagulation (DIC), and death. Treatment is supportive, possibly plasma exchange.

How to recognise it
Irregular, brain- or walnut-shaped cap, reddish-brown to dark brown - wrinkled and convoluted rather than pitted in a honeycomb. The stem is short; the interior is hollow or chambered, not cleanly hollow throughout.
Where it grows
Sandy coniferous forest floor, especially under pine. Also turns up on burned ground and other disturbed soils where the forest floor has been opened up.
Cooking
In the Nordic countries and Eastern Europe it is traditionally eaten after repeated parboiling, but this is considered risky - the toxin content is reduced but not entirely eliminated, and the vapors are poisonous.

Contains gyromitrin which is converted in the stomach to monomethylhydrazine (MMH): vomiting, dizziness, liver damage, in severe cases convulsions and death. Individual sensitivity varies. Although traditionally eaten after repeated parboiling in the Nordic countries and Eastern Europe, this is regarded as risky - the toxin content is reduced but not fully eliminated, and the vapors are poisonous.

True morels have a regularly pitted honeycomb cap and are completely hollow inside; the false morel is brain-like and filled/chambered.

The rules that save lives
- Eat only mushrooms you are 100% sure of, and learn a few species at a time.
- Pick mushrooms one by one and inspect each - especially funnel chanterelles (webcap) and russulas (death cap).
- As a beginner, avoid the whole Amanita genus and all small brown mushrooms.
- Never eat white (or green) mushrooms with white gills, and never brown mushrooms with brown gills.
- Don't taste-test unknown mushrooms, and teach children never to put mushroom in their mouths (the chew-and-spit test is for russulas only).
- Always lift the whole mushroom with the stem base - a volva is a decisive Amanita feature hidden in the soil.
- Cook all wild mushrooms thoroughly - never eat them raw.
- If vomiting or diarrhoea sets in more than 6 hours after a mushroom meal, contact care immediately - late onset is typical of the most dangerous toxins. Don't wait.
