How to recognise it

How to recognise it

Tricholoma josserandii is a medium-sized knight mushroom whose appearance at first glance sits firmly within the large and confusing complex of grey-brown Tricholoma species that challenge experienced foragers.

Cap

The cap is dry, silky-fibrillose to nearly smooth, pale grey-brown to ochre-buff - not dramatically scaled like T. pardinum, and not as uniformly dark as T. terreum.

Gills

The sinuate gills (characteristically notched where they meet the stem, a hallmark of the genus) start white and clean but develop diagnostic reddish-brown to rusty-pink spots or a mottled flush as the fruiting body matures.

This gill-spotting is not subtle in well-developed specimens and is the primary field character used to identify T. josserandii with confidence.

Stem

The stem is solid, white to pale buff, silky-fibrillose, without any ring (annulus) or basal volva.

Flesh

The flesh is firm and white throughout, and does not discolour significantly when cut.

Smell & taste

It shows the genus-typical mealy (farinaceous) smell - evoking fresh flour, raw dough, or cucumber peel.

Why it's dangerous

The primary danger of T. josserandii is that it grows in exactly the same habitats and seasons as multiple edible grey-brown Tricholoma species. It shares the features that characterise many of them:

  • dry cap
  • sinuate gills
  • mealy smell
  • firm white flesh

A forager specifically targeting T. terreum (grey knight) or T. columbetta (dove knight) may inadvertently include T. josserandii in a harvest - if they do not carefully inspect gill colour at maturity, or collect young button-stage specimens before the diagnostic gill-spotting has developed.

Even a modest quantity consumed causes one of the most physically unpleasant and dangerous gastrointestinal syndromes produced by any European woodland mushroom.

The lack of a commonly recognised English name means it may not appear in popular foraging guides, further reducing awareness.

Tricholoma josserandii should be treated with the same caution as T. pardinum.

Toxin

The responsible toxic compound or compounds have not been fully characterised biochemically. The syndrome is consistent with thermostable gastrointestinal irritants similar to those implicated in T. pardinum poisoning.

Amatoxins (alpha-amanitin and related peptides), orellanin, gyromitrin, and other well-characterised mushroom toxins are not involved.

The irritant fraction acts directly on the gastrointestinal mucosa. Because the toxin survives cooking, there is no preparation method that renders the mushroom safe to consume.

Symptoms

Onset is typically 30 minutes to 2 hours after ingestion. The primary syndrome is severe acute gastroenteritis:

  • sudden and violent nausea
  • profuse repeated vomiting
  • intense abdominal cramping and pain
  • watery diarrhoea

In severe cases vomiting is so persistent and forceful that it leads to significant dehydration and electrolyte imbalance, often requiring hospital admission and intravenous fluid replacement.

Most patients recover within 24-72 hours with supportive care.

Vulnerable individuals - the elderly, children, pregnant individuals, and those with pre-existing renal, hepatic, or cardiac conditions - face higher risk of serious complications from dehydration.

Fatalities are extremely rare but have been documented.

Staying safe

Tricholoma josserandii is a seriously toxic species causing severe acute gastrointestinal poisoning. It is not as widely publicised as Tricholoma pardinum but is documented in European toxicology literature as a significant poisoning agent.

The French mycologist Marcel Josserand (after whom the species is named) first drew attention to its toxicity. Subsequent case reports from France, Germany, and adjacent countries confirm that consumption causes violent, prolonged gastroenteritis.

The toxic compounds are believed to be thermostable gastrointestinal irritants not destroyed by cooking. Rare reports of fatalities exist in the older European mycological literature, likely associated with severe dehydration in vulnerable individuals.

The absence of a well-known English common name is itself a risk factor: foragers without specialist knowledge of European Tricholoma may not recognise the name and may not be aware of the danger.

Positive identification of any grey-brown Tricholoma before consumption is essential. When in any doubt about species identity, do not eat.

Where & when it grows

Habitat

This species is a forest ectomycorrhizal partner of deciduous trees, particularly oak and beech, across the western and central European lowlands and hills.

It is not a montane specialist in the way T. pardinum tends to be. It is found in a broad range of mature deciduous woodland types:

  • ancient oakwood
  • beech-hornbeam forest
  • parkland with old oaks
  • woodland edges with well-developed humus

It is characteristic of calcareous to neutral soils and is less common on strongly acidic substrates.

Because it grows in exactly the same woodland landscapes as numerous edible grey-brown Tricholoma species - T. terreum, T. columbetta, T. stiparophyllum - the habitat context provides no safety signal. The forager must rely entirely on morphological identification.

When

Josserand's knight fruits from late July or August through October, often persisting into early November in mild years.

The main flush rides the September and October wave of autumn mushrooms - those weeks when deciduous forest floors seem to come alive after the first cooling rains and soils drop below about 15 °C.

It emerges at exactly the same time and in exactly the same places as many of the edible grey-brown knights that foragers seek, which is what makes careful identification so important.

How it grows

Grows singly or in small scattered groups, strictly on the ground, its mycelium quietly woven through the roots of oak or beech - a hidden partnership that can persist for many years.

Young fruiting bodies push up with the cap margin tightly inrolled, and at this stage the gills are clean white, giving little away. It is only as the cap expands and the fruiting body matures that the characteristic reddish-brown to rusty-pink spotting develops on the gill faces.

Button-stage specimens that have not yet coloured their gills can look much like several other knights. Wait for - or seek out - a mature specimen before attempting a confident identification.

Fruiting conditions

Flushes after late-summer or autumn rainfall events (20 mm or more over 14 days) when soil temperatures fall into the 7-16 °C range. In central-west Europe this typically means the September-October window. The oak and beech forest habitat moderates soil temperature fluctuations, producing a relatively steady fruiting window across the main autumn season.

Look-alikes

Tricholoma josserandii shares the grey-brown, mealy-scented, sinuate-gilled, woodland floor growth habit with many other Tricholoma species. The most realistic lookalikes:

  • Tricholoma columbetta (dove knight, white knight) is a close cousin: cap white to pale buff with faint grey or pinkish tones, dry silky cap, sinuate white gills, mealy smell, and grows under similar deciduous trees. It is generally considered edible but requires absolutely certain identification - importantly, its gills remain white throughout (they do not develop the rusty-pink spotting that characterises T. josserandii).
  • Tricholoma stiparophyllum (syn. T. album in some works; white-capped spring and autumn knight) has a white-buff cap surface and white gills that stay clean white without spotting; it smells mealy but can have a bitter-acrid aftertaste and is considered of uncertain edibility.
  • Tricholoma terreum (grey knight) is a well-known edible species with a dry, uniformly grey, radially fibrillose cap; its gills are white and do not develop pink spotting; it is smaller and more uniformly grey than T. josserandii.
  • Tricholoma pardinum (tiger knight, the most dangerous grey knight) has a strongly scaled concentric cap in bold grey-brown - far more dramatically patterned than T. josserandii - and its gills are entirely white without spotting; T. pardinum causes even more violent GI poisoning.
  • Clitocybe species with decurrent (rather than sinuate) gills and different smell may occur in the same habitat but are separated by gill attachment and typically by smell.
Tiger knightdeadly

T. pardinum has a pale grey-white cap covered in bold concentric rings of darker grey-brown chunky scales - far more dramatically patterned than the relatively smooth-fibrillose cap of T. josserandii. Its gills are entirely white and do not develop spotting. Both species are severely toxic. T. pardinum grows more often in beech forest on calcareous soils; both occur in autumn.

Dove knight

T. columbetta has a white to pale-buff dry cap with faint grey or pinkish tints, sinuate white gills that do NOT develop rusty-pink spotting, and the same mealy smell. It is considered edible with careful identification. The absence of gill-spotting in mature specimens is the key separation from T. josserandii. Both grow under deciduous trees in autumn.

Grey knight

T. terreum has a uniformly grey, dry, radially fibrillose to finely granular cap (not ochre-buff) and white gills that remain clean white without developing any spotting. It is smaller on average (cap 3-8 cm) and has a milder, less pronounced mealy smell. Edible but requires certain identification.

Soapy knight

T. saponaceum is highly variable in colour (grey-green, grey-brown, olive) and is immediately identified by its overwhelming smell of cheap soap or detergent. The flesh and stem base turn pink to reddish when cut or bruised. Neither feature is present in T. josserandii: T. josserandii smells mealy and its flesh stays white.

White knight

T. stiparophyllum (sometimes treated as T. album) has a white to cream-buff cap and white gills without spotting. Its distinguishing feature is an often strongly bitter-acrid or rancid smell that overrides the mealy note. Gills stay white. Generally considered inedible due to bitterness and uncertain toxicity.
