Edible only with the right preparation - or safe for some people but not others. Learn the caveats first.

How to recognise it
A medium-sized brittlegill.
Cap
The cap uniquely blends olive-green and grey-olive tones with a violet or purplish overlay - a combination that in wet light can look almost mud-coloured.
The violet tint may be strongest at the disc or in damp conditions, while dry specimens fade to dull olive or khaki.
The cuticle peels easily halfway in, revealing chalky-white flesh.
Gills
Like all russulas, the gills are white and extremely brittle: stroking them with a fingertip causes them to crumble and fragment, in complete contrast to the greasy, flexible gills of Russula cyanoxantha.
Stem
The white, ringless, volva-free stem distinguishes it at a glance from any Amanita.
Smell & taste
The clearest single field character beyond colour is taste: a small piece bitten and immediately spat out will register a sharp, persistent, peppery burn - unpleasant enough that misidentification for a mild edible russula is unlikely once tasted.
Why it's dangerous
The intrinsic toxicity of R. olivaceoviolascens is low-to-moderate (gastrointestinal irritant only).
The genuine danger is misidentification: the olive-green to violet-tinged cap directly mirrors the coloration of Amanita phalloides in its typical form.
Deaths from death cap poisoning are frequently preceded by initial misidentification as a russula or similar.
Treat every olive-capped, white-gilled woodland mushroom as potentially an Amanita until fully proven otherwise by structural inspection.
Toxin
The acridity is attributed to acrid sesquiterpene compounds (related to the russulane class), present in the laticiferous hyphae of the gills and cap cuticle.
These compounds are thermolabile to varying degrees but are not destroyed reliably by normal cooking, so heat does not necessarily render the mushroom safe.
No amatoxins, orellanin, gyromitrin or muscarine are present.
Symptoms
Ingestion of significant quantities may cause gastrointestinal irritation: onset within 1-3 hours, presenting as nausea, vomiting, stomach cramps and diarrhoea.
Symptoms are typically self-limiting within 12-24 hours.
The main danger is not the mushroom's own toxins but the risk of misidentifying it as another species - particularly the death cap. In that case symptoms would follow a very different, life-threatening trajectory: an initial latency of 6-24 hours before severe GI distress, followed by apparent recovery and then progressive hepatic and renal failure.
Any suspected Amanita exposure requires immediate emergency medical attention.
Staying safe
Russula olivaceoviolascens is not considered safe to eat.
It has a sharply acrid taste, principally due to unstable sesquiterpene compounds in the gill tissue, characteristic of the acrid 'peppery' group of russulas.
While not known to produce the deadly amatoxins or orellanin of the most dangerous mushrooms, consuming it may cause gastrointestinal irritation - nausea, vomiting and abdominal pain - particularly if eaten raw or in quantity. The library convention classifies it as 'caution / isPoisonous: true' for this reason.
More critically from a safety standpoint, the olive-and-violet cap colour is a documented risk factor for confusion with the death cap (Amanita phalloides), which kills through irreversible liver and kidney failure and is responsible for the majority of fatal mushroom poisonings worldwide.
Any olive-capped, white-gilled, white-stemmed mushroom in a broadleaved forest must be treated with full Amanita caution. Inspect:
- the stem base for a volva
- the stem for a ring
- the gill attachment
A russula has attached brittle gills, no ring and no volva; a death cap has free non-brittle gills, a ring and a volva.
If in any doubt, do not eat it and do not serve it to others.
Where & when it grows
Habitat
A woodland mushroom that depends on living broadleaved trees to complete its life cycle as an ectomycorrhizal partner, trading photosynthate for mineral nutrients via underground hyphal networks.
Beech and oak are the primary hosts across Central and Western Europe, though it also fruits under hornbeam, birch and hazel.
Look for it on the forest floor among decomposing leaf litter in areas of mature closed-canopy woodland, on moderately fertile, slightly acid to neutral soils.
It does not grow on wood, in lawns or in open grassland - any such setting should prompt reassessment of the identification.
When
Fruits between mid-summer and mid-autumn, from July to October in most of its range.
The strongest flushes come in August and September, when soil temperatures remain warm (above about 12 °C) and rainfall has been plentiful.
As a mycorrhizal species it does not decompose substrate but relies on established tree-root networks, so new fruit bodies can appear repeatedly at the same spot over multiple years.
How it grows
Solitary or scattered, never in tight clusters, always pushing up from mineral soil in the root zone of its host trees.
As a mycorrhizal partner it is tethered to living roots - you will not find it on woody debris, rotting logs or open compost.
Individual caps take several days to develop, expanding fastest after warm, wet spells.
Because the underground mycelium persists from year to year, the same patch of forest floor can produce fruit bodies repeatedly across many autumns.
Fruiting conditions
Mycorrhizal species; flushes follow soaking late-summer to autumn rain once soil temperatures are above about 12 °C. Peak in August-September. Repeated flushes at the same site are common across multiple autumns.
Look-alikes
The most dangerous confusion is with Amanita phalloides, the death cap, which frequently shows an olive-green, grey-green or occasionally violet-tinted cap in mature specimens - a colour range that overlaps directly with R. olivaceoviolascens.
Both grow on the ground in deciduous forest beside beech and oak in the same seasons.
The death cap, however, always has:
- 1a distinctive membranous sac-like volva at the stem base, often partially buried;
- 2a pendulous ring on the stem;
- 3free, non-brittle white gills; and
- 4fibrous, non-chalky flesh.
R. olivaceoviolascens has no ring, no volva, attached brittle gills and chalky-snapping flesh - these differences are absolute.
The death cap's mild, pleasant taste means that tasting it will not warn you; the only safe check is a thorough structural inspection.
Among edible Russula species, Russula grisea (grey-capped, mild) and Russula olivacea (olive-ochre, mild) are mild-tasting species that could look similar at a glance but lack the violet hue and are not acrid.
Russula aurea has olive or yellow cap tones but is notably golden-yellow and mild.
The most dangerous confusion: the death cap regularly shows an olive-green, grey-green or olive-violet cap in exactly the colour range of R. olivaceoviolascens, and grows in the same beech and oak forests at the same time of year. The death cap always has a membranous sac-like volva at the stem base (often partially buried - dig to check), a pendulous ring on the stem, free non-brittle white gills and fibrous non-chalky flesh. R. olivaceoviolascens has NO volva, NO ring, attached brittle gills that crumble on contact, and chalky-snapping flesh. The death cap's taste is mild and agreeable - it will NOT warn you. Structural inspection of the stem base is mandatory.
Shows olive-ochre to golden-yellow cap tones but is characteristically bright, warm-yellow and typically has yellow to golden gill edges. It is mild-tasting and edible. The warm golden hue is quite different from the cold, muted olive-grey-violet of R. olivaceoviolascens.
A mild-tasting edible russula with a grey to grey-violet cap. It shares the violet-grey tones but lacks the olive-green component and is not acrid. Confirmed by taste: R. grisea is mild and pleasant, R. olivaceoviolascens is sharply peppery. Both have brittle gills, no ring and no volva.
A larger, mild-tasting species with an olive to ochre-olive cap and typically pinkish-red gill edges in age. It lacks the violet tint of R. olivaceoviolascens and has a distinctly mild, nutty taste. Spore print pale cream to pale ochre (slightly deeper than R. olivaceoviolascens). Not acrid.
Bright scarlet-red cap (not olive), acrid taste and white gills. Causes gastrointestinal upset but is not lethal. Colour alone separates it immediately from the olive-violet R. olivaceoviolascens.
