How to recognise it

Russula nothofagi is a medium to large brittlegill of the southern beech understorey.

Cap

Its colour sits in the vinaceous-red to purplish-chestnut range - rich reddish-brown tones that can call to mind the bark of the beech trees above it.

The cap starts tightly domed and flattens over days to a broad, shallow plate, sometimes developing a slight central depression with age.

The dry surface is smooth, and the cuticle can be peeled back from the margin, a feature shared across the genus.

Gills

The gills are white to ivory, relatively crowded, and classically brittle - running a thumb across them causes them to crumble rather than bend, the definitive tactile identity of a Russula.

Stem

The stem is white, firm, and solid in younger specimens, becoming spongy in the pith with age in the way of all brittlegills.

Most importantly, inspect the very base of the stem: there is no volva (membranous sac or cup), no girdle, and no ring anywhere on the stem - the absolute rule that separates every Russula from a potentially deadly Amanita.

Flesh

Flesh is white and firm. The spore print falls in the white to pale cream range.

Smell & taste

The smell is mild. The taste is generally mild but can tend toward slightly acrid in some specimens; any strongly peppery taste suggests a related acrid species.

Where & when it grows

Habitat

This species is deeply tied to the living root systems of New Zealand's native Nothofagus (southern beech) trees and will not be found outside those forests.

Red beech, silver beech, hard beech, and mountain beech all serve as hosts. The specific beech species present changes with altitude and moisture, but the ecological context - old-growth or regenerating beech forest with well-developed leaf litter - remains the same.

Closed-canopy forest in humid sites, valley floors, and sheltered slopes are the most productive microhabitats.

The relationship is mutualistic: the fungal mycelium extends the tree's water and nutrient uptake while drawing photosynthetic sugars in return, so both organisms benefit. The mushrooms are the visible, ephemeral reproductive output of an underground partnership that may be decades old.

Russula nothofagi is confined to New Zealand within the Australasian region; it has not been reliably recorded from Australian eucalypt forests.

When

Fruiting aligns with the Southern Hemisphere autumn, from March to June. It is driven by the classic autumn trigger: a drop in soil temperature combined with meaningful rainfall ending the summer dry period.

Peak season is typically April and May, when soils are moist and temperatures are cooling but have not yet fallen to the low single digits that halt most mushroom growth.

At higher-altitude beech forest sites (above 700-800 m), the season may open earlier and extend later than at sea-level gorge forest.

Experienced observers in established sites can expect fruiting most years under suitable conditions, since the perennial ectomycorrhizal mycelium persists underground between seasons.

How it grows

Grows singly or in small scattered groups on the forest floor among beech leaf litter and humus - never in dense clusters and never on wood.

Because the mycelium is anchored to living host-tree roots, fruiting bodies always emerge within the tree's root zone, typically close to the trunk or within the drip-line of the canopy.

The same sites can be productive year after year, making return visits to known locations in April-May a reliable strategy.

Individual fruitbodies develop over roughly one to two weeks from a pinhead to full size, with a relatively brief window of prime condition before softening and becoming insect-colonised.

Fruiting conditions

Southern Hemisphere autumn species fruiting March-June. Flush triggered by significant post-summer rainfall (20+ mm over 14 days) as soil temperatures cool below ~16 °C. Ectomycorrhizal; perennial mycelium means the same sites can fruit annually. Peak timing April-May across most of the New Zealand range.

Look-alikes

The most dangerous confusion in New Zealand Nothofagus forest is with Amanita phalloides, the death cap. It has been introduced to New Zealand (associated with introduced oaks and other broadleaved exotic trees) and has also been found in proximity to exotic trees planted in forest margins and gardens.

The death cap can produce a brownish, vinaceous-brown, or olive-brown cap in the same pale-to-medium-brown range as some Russula nothofagi specimens, and is also white-gilled and white-stemmed. It is deadly in any quantity.

The definitive separation. Amanita phalloides:

  • always has a membranous volva (cup) at the stem base - sometimes buried
  • usually a skirt-like ring on the stem
  • free (not attached) gills
  • fibrous rather than chalky flesh

Russula nothofagi has:

  • NO volva
  • NO ring
  • attached brittle crumbling gills
  • chalky-snapping flesh

Always dig up the complete stem base before collecting any pale-capped mushroom in beech forest margin or exotic-tree plantings.

Within Russula itself, New Zealand's Nothofagus forests contain several closely related and poorly resolved species, some with acrid taste, whose edibility is equally unestablished. None are known deadly, but distinguishing them reliably requires spore microscopy.

Outside New Zealand, the closely related Chilean Russula associated with Nothofagus pumilio has been documented in South American beech forest and is similarly uncurated for edibility.

Death capdeadly

The death cap has been established in New Zealand and can produce a brownish, olive-brown, or vinaceous-tinged cap that overlaps the colour range of R. nothofagi. Both are white-gilled and white-stemmed. Amanita phalloides ALWAYS has a membranous volva (sac) at the stem base - dig the base fully out of the soil to check - and usually a skirt-like ring on the stem; its gills are free and its flesh fibrous and non-chalky. R. nothofagi has NO volva, NO ring, attached brittle crumbling gills, and chalky-snapping flesh. A taste test will NOT protect you: the death cap has a pleasant, mild taste. Always check for the volva first, every time.

Destroying angeldeadly

Pure white in all stages, with a cup-like white volva at the base and a white ring on the stem; gills free, flesh fibrous. Deadly in any quantity from amatoxins. R. nothofagi is reddish-brown to vinaceous in cap colour, not pure white; it has no volva and no ring, and its gills crumble when touched rather than flexing freely. Amanita virosa has not been confirmed as established in New Zealand, but the genus is relevant to visitor awareness.

Related NZ beech forest Russula species

New Zealand Nothofagus forests host a suite of native and poorly resolved Russula species with similar reddish-brown to violet-brown cap colours, white gills, and white stems. Some are acrid, some mild; none are documented as deadly, but none are confirmed safe to eat either. Reliable separation from R. nothofagi requires spore microscopy and is not achievable in the field. Treat all native NZ Russula species as of uncertain edibility.

Russula (acrid reddish species)

Acrid red-capped sickener russulas cause gastrointestinal upset (vomiting, diarrhoea) when eaten raw or inadequately cooked. They can share a red-to-vinaceous cap colour with R. nothofagi. The taste test is diagnostic: acrid, burning, peppery in the mouth = reject the specimen. R. nothofagi is generally mild-tasting, though some collections trend toward slight acridity - any strongly peppery specimen should be discarded.

Picking & cleaning

Russula nothofagi has no established culinary tradition and is not recommended for eating - see Safety for the full reasoning.

If collecting for scientific or identification purposes, twist or cut the stem at the base and immediately examine the stem base for any volva or ring before doing anything else. Their absence confirms Russula rather than the deadly Amanita.

Taste a tiny fragment of gill tissue and spit it out: a mild taste is consistent with R. nothofagi, while a strongly acrid, burning taste may indicate a closely related acrid species. Do not swallow any tissue in this test.

Cooking

Not recommended. Russula nothofagi has no established edibility and no traditional culinary use.

Even if a future study were to demonstrate safety for individual collections, the practical identification difficulty and the serious risk of misidentification with Amanita phalloides in New Zealand beech forest make this an inappropriate species to collect for food.

Leave it in the forest.

Good to know

Russula nothofagi should not be eaten. Its edibility has never been formally established:

  • no documented culinary tradition for this species in New Zealand
  • no confirmed toxicological safety data
  • some collections show a tendency toward an acrid taste that may indicate the presence of irritant sesquiterpene compounds common in acrid Russula species

The caution classification reflects genuine uncertainty rather than proven toxicity, but uncertainty is not the same as safety, and the 'mild Russula = safe' heuristic from European foraging culture does not translate automatically to New Zealand native species.

The primary life-threatening risk in this habitat is misidentifying a Russula for an Amanita or vice versa. The introduced death cap (Amanita phalloides) has been established in New Zealand since at least the 1950s and is among the most lethal fungi known. It can appear near beech-forest margins wherever introduced exotic broadleaved trees have been planted.

Any white-gilled, white-stemmed, brownish-capped mushroom found in or near New Zealand forest must be inspected with full Amanita vigilance before any consideration of edibility. Look for:

  • the volva at the stem base (dig the base out of the soil)
  • the ring on the stem
  • the free gill attachment

All three present means Amanita, which is potentially deadly. If in doubt, do not eat it.
