How to recognise it

How to recognise it

Russula nigricans is one of the largest brittlegills, with a robust, heavy fruitbody that can reach 20 cm across and feels unusually dense for the genus.

Cap

Young caps are hemispherical, ivory-buff to dirty white, the surface matte and dry. As the mushroom matures it flattens completely, then develops a broad central depression, eventually becoming shallowly funnel-shaped.

The entire surface gradually turns sooty grey and ultimately coal black - whether through ageing or mechanical damage.

Gills

The gills are strikingly thick and blunt-edged, quite widely spaced for a Russula (perhaps 4-6 per centimetre), and they fork infrequently.

They begin creamy white, but when cut or bruised they turn distinctly reddish-pink within 10-30 seconds - one of the most diagnostic features of the species - before slowly greyening and finally blackening over several hours.

Stem

The stem is stout, cylindrical to slightly clavate, white when young and blackening with age, solid throughout, very firm.

Flesh

The flesh is white, hard and dense; a cross-section exposed to air also shows the same sequential colour change: white → reddening → greyening → black.

Smell & taste

The smell is mild, slightly acidic or faintly disagreeable; taste acrid when raw.

Spore print white. Microscopically the spores are broadly ellipsoid, 6.5-9 × 5-7.5 µm, with isolated low warts and short ridges that do not form a complete reticulum, strongly amyloid in Melzer's reagent.

Why it's dangerous

Low direct toxicity from R. nigricans itself - it is irritant rather than acutely dangerous.

The primary danger is habitat confusion. Large, pale, young specimens may be collected alongside or instead of edible Russula species.

Sharing habitat with Amanita phalloides and A. virosa means that any forager who gathers large white mushrooms without a rigorous identification protocol is at genuine risk of deadly poisoning.

Toxin

The acridity is attributed to sesquiterpene compounds present in the flesh - a group of pungent aldehydes similar in character to those found in acrid Russula and Lactarius species.

These compounds act as irritants to oral and gastrointestinal mucosa even in small quantities.

No single fully-characterised toxin unique to R. nigricans has been isolated, but the irritant effect is consistent and well-documented empirically.

Symptoms

If ingested raw or undercooked in significant quantity:

  • burning sensation in the mouth and throat
  • gastrointestinal irritation
  • nausea
  • possibly vomiting and diarrhoea

Symptoms are generally self-limiting and resolve without specific treatment.

No reports of serious systemic toxicity from R. nigricans itself in the medical literature; the greater clinical risk is misidentification leading to Amanita poisoning.

Staying safe

Russula nigricans causes gastrointestinal irritation if eaten raw or insufficiently cooked - the acrid sesquiterpene compounds in the flesh are irritants to the oral mucosa and digestive tract.

It is not acutely deadly, but it is not safe to eat and is classified as poisonous.

The primary safety concern is the habitat overlap with deadly species. Its large, distinctive blackening fruitbodies are useful orientation points in a forest, but novice foragers in the same habitat risk encountering Amanita phalloides or A. virosa.

CRITICAL: Never collect any pale, unbuttoned mushroom without checking for a volva (membrane sac at the stem base) by digging up the entire base - Amanita buttons can superficially resemble large pale mushrooms before cap expansion.

Russula species lack all three of the following:

  • a volva
  • a ring on the stem
  • free gills

Always confirm all three absences before consumption of any Russula.

Where & when it grows

Habitat

Russula nigricans establishes ectomycorrhizal partnerships with a wide range of broadleaved and coniferous trees. It favours established woodland on neutral to mildly acidic, moist but well-drained mineral soils.

Beech-oak woodland across central and western Europe is a classic habitat; it also occurs regularly under spruce, fir, and pine, particularly in mixed upland forests of central Europe and Scandinavia.

It appears in parks with mature trees, roadside avenues, and cemetery plantings as well as primary forest.

Because old blackened fruiting bodies decompose slowly, their presence is a useful historical indicator - scan the litter layer for the black ink-stain appearance of decayed specimens to locate productive patches.

When

Fruiting bodies emerge from July onwards and can persist until late November in mild autumns. The bulk of fruiting coincides with classic autumn mushroom season: late August through October.

Individual specimens age slowly and are often found at multiple stages on a single visit - fresh white caps alongside completely blackened veterans.

Parasitised specimens hosting Asterophora parasitica (which dusts them with asexual spores) are common from September onward.

How it grows

Solitary or scattered; never in dense clusters. The fruitbody develops entirely underground in the button stage, pushing through the litter layer and soil as a white dome.

Growth is slow relative to many agarics; a single cap may take two weeks to reach full size. The flesh is notably hard and dense for a Russula, lacking the crumbly texture of species such as R. emetica.

Old blackened specimens remain on the forest floor for weeks, sometimes months, before fully decomposing.

Fruiting conditions

Fruiting triggered by late-summer and autumn rainfall combined with cooling soil temperatures; individual fruitbodies develop slowly over 2-3 weeks and persist for many weeks before fully decomposing.

Look-alikes

The most important lookalike context for Russula nigricans is its role as a potential confusion point for edible Russula species and for far more dangerous species sharing the same habitat.

Within the blackening Russula complex:

  • R. albonigra (Blackish-white brittlegill) is almost identical: it lacks the intermediate reddening phase, turning directly from white to black, has a mild or slightly acrid taste, and similarly widely spaced thick gills.
  • R. adusta (Singed brittlegill) is also similar - brownish-grey to grey-black, thick spaced gills, but flesh browning without the pink intermediate stage and mild taste.
  • Russula subnigricans (documented in China, Japan and East Asia) is deadly, causing fatal rhabdomyolysis; it is NOT established in Europe but the comparison is relevant for foragers active in East Asia.

Outside the blackening Russula complex, the key safety concern is confusing ANY pale, large Russula button (before colour changes develop) with the deadly destroying angel Amanita virosa or death cap Amanita phalloides button stages - both lack the thick gill spacing and both possess a volva at the base.

Always dig up the entire stem base and check for a membranous volva before eating any pale-capped mushroom.

Blackening russula (East Asia)deadly

Russula subnigricans is a deadly species documented in China, Japan, and East Asia causing rhabdomyolysis. It is NOT established in Europe. It resembles R. nigricans in overall blackening habit but is smaller (cap 4-10 cm), has more crowded gills, and a more uniformly dark grey-brown cap from an early stage. Flesh reddens slightly on cut but does NOT fully blacken. If foraging in East Asia, treat any blackening Russula as potentially R. subnigricans and avoid.

Death cap (button stage)deadly

The deadly death cap in its egg stage (before cap expansion) is a white to olive-white mushroom that can be confused with any large pale mushroom button. Amanita phalloides has a membranous volva (cup) at the stem base, a skirt-like ring on the stem, and free gills. Russula nigricans has NONE of these: no volva, no ring, gills attached to the stem. Always dig up the stem base and check.

Destroying angel (button stage)deadly

Pure white in all stages, with a pure white volva and ring. Deadly in any quantity. Distinguished from R. nigricans by the volva at the base, the ring on the stem, and free gills. R. nigricans buttons are firmer, have widely-spaced blunt thick gills, and no ring or volva.

Asterophora parasitica (on old specimens)

A small pin-mould that parasitises old, blackened R. nigricans and R. adusta fruitbodies, producing tiny greyish-white caps dusted with brown chlamydospores. Not a confusion risk for food, but novices may be puzzled by its presence on the blackened Russula host.

Blackish-white brittlegill

R. albonigra turns directly from white to black when cut or bruised with NO intermediate reddening/pinking stage - this is the single most reliable field distinction. It also tends to have a more uniformly blackish-grey cap surface and mild or slightly acidic taste. Also inedible.

Singed brittlegill

R. adusta is greyish-brown to grey-black, with flesh that browns (not reddens) on cutting before slowly darkening. The gills are more crowded. Taste mild to slightly acrid. Also inedible but not acutely toxic.

Blackening brittlegill (Russula nigricans) - Mushroom Hunt
