Russula cellulataGood to eat, once you have identified it with certainty and cooked it through.
Never eat a mushroom you are not 100% sure of - check the look-alikes below, and always cook wild mushrooms.
How to recognise it
Russula cellulata is a medium to moderately large brittlegill.
Cap
Reddish-purple to purplish-violet or purplish-brown, typically fading toward the margin with age. The surface is smooth and dry to very slightly tacky.
The cuticle (cap skin) can be peeled back roughly one-third toward the centre - a useful confirmation that you have a true Russula. In older specimens the cap margin becomes distinctly ridged or furrowed, reflecting the gill arrangement beneath.
Gills
White to cream, adnate or very slightly running down the stem. They share the brittle chalk-like quality of all Russula flesh: break any part and it crumbles cleanly rather than tearing into fibres.
Critically, no milky sap (latex) is released when the flesh is cut or broken, which separates it from superficially similar milkcap species.
Spore print is white.
Stem
White, solid when young and becoming slightly spongy, with no ring and no volva (basal cup).
Where & when it grows
Habitat
This species is a classic miombo ectomycorrhizal fungus, forming obligate underground partnerships with the root systems of Brachystegia and Julbernardia - the two dominant tree genera of the vast Zambezia miombo belt spanning Tanzania, Zambia, Zimbabwe, Mozambique, Malawi, and the Democratic Republic of Congo.
It also associates with Uapaca spp. in woodland where these trees are present.
It fruits directly on the soil surface beneath or near host trees, often in loose groups. It requires living host trees; you will not find it in cleared or heavily degraded woodland.
When
Fruiting is tightly tied to the onset of the long rains in the southern Africa rainy season, typically November-March.
The peak flush usually occurs December-February, when sustained rainfall meets warm tropical soil temperatures (18-26 °C).
Fruit bodies can appear in large numbers after heavy rains during this window, and disappear quickly in very hot, dry spells between rainfall events.
How it grows
As a mycorrhizal species, Russula cellulata cannot be cultivated and exists only in intact woodland ecosystems with established ectomycorrhizal networks.
Individual fruit bodies develop rapidly after triggering rainfall, typically emerging within 5-12 days of a substantial rain event.
They are short-lived, often maturing, releasing spores, and collapsing within a week in warm conditions.
Fruiting conditions
Tropical miombo mycorrhizal species requiring warm soil temperatures (18-28 °C) and sustained rainy-season rainfall to trigger fruiting. Flush lag is shorter than in temperate Russulas due to consistently warm conditions.
Look-alikes
The most serious confusion risk in miombo woodland is with deadly Amanita species, particularly Amanita phalloides (death cap) and related white or pale-capped African Amanitas.
A young Amanita fruit body still enclosed in its universal veil (the 'egg' stage) can superficially resemble a Russula before the cap expands.
Once expanded, Amanitas always show two features that Russula cellulata never has:
- a ring on the stem
- a volva (membranous cup or bag) at the base
The flesh of Amanita also tears into longitudinal fibres rather than crumbling brittlely.
Always excavate the full stem base before eating any pale-capped gilled mushroom in this habitat.
Within the genus Russula, several African species of similar colour occur; many are edible, but some acrid species should be discarded. The presence of true latex (milky sap) immediately places a specimen in the milkcap genera (Lactarius, Lactifluus) rather than Russula.
Several African Amanita species are deadly. All have a ring and a volva; Russula has neither. The flesh tears into fibres rather than crumbling. Never skip the stem-base excavation check.
The death cap has a ring (annulus) on the stem and a membranous volva (basal cup) at the base; Russula cellulata has neither. Amanita flesh tears into fibres; Russula flesh crumbles brittlely. Always dig up the full stem base and check for a volva before eating any gilled mushroom in African woodland.
African milkcap species (Lactarius, Lactifluus) look broadly similar but release milky or watery latex when flesh is cut or broken. Russula cellulata produces no latex whatsoever.
Many Russula species occur in the same habitat. Acrid-tasting russulas should be discarded (they are not deadly but cause gastrointestinal upset). Taste a small piece and spit: mild = acceptable, sharp burning acrid = discard.
In the kitchen
Picking & cleaning
Apply the standard Russula identification sequence before picking:
- 1Confirm the chalk-like brittleness by breaking the stem - it crumbles cleanly, it does not peel into fibres.
- 2Confirm no milky latex emerges from the cut flesh.
- 3Confirm no ring on the stem and no volva (basal cup or pouch) at the stem base - dig gently to expose the full base.
- 4Taste a tiny piece of raw flesh and spit it out: mild to only slightly acrid is acceptable for this species, sharply burning acrid taste warrants caution.
Never pick an unfamiliar mushroom in African woodland without checking for the Amanita features (ring + volva) first.
Harvest young, firm specimens; older softening individuals deteriorate quickly in tropical heat.
Cooking
The firm, non-watery flesh handles heat well and suits the relish cooking style of the miombo region:
- sliced and fried in oil
- added to stews with tomato and onion
- simmered with groundnuts and served alongside nshima or ugali
Because the flesh is brittle rather than fibrous, it holds its shape when pan-fried but breaks apart in long-simmered dishes, thickening the sauce.
Best used fresh. Drying is possible for short-term storage, but the crumbly texture does not rehydrate as cleanly as milkcaps (Lactarius, Lactifluus).
Good to know
Russula cellulata is consumed by local communities in the miombo region and is not considered toxic. The species itself poses no known poisoning risk when properly identified.
The critical safety step is excluding deadly Amanita species from the basket - a non-negotiable check in African woodland. Every fruit body must be confirmed free of the following before consumption:
- a ring on the stem
- a volva at the base
- fibrous flesh
The brittlegill crumble test and latex check together make the Russula genus reliably identifiable even without a species-level determination.
Do not rely on colour alone: colour in Russula is highly variable and not a reliable identification feature.
