The above-ground fruiting body is triggered by fire rather than by rainfall or temperature, so emergence cannot be predicted by season alone: look for scorched eucalypt/rainforest ground and probe near charred logs with a stick. Outside fire season, sclerotia surface during ploughing or road-cutting.

How to recognise it

Laccocephalum mylittae is a fungus of two quite separate bodies - one concealed, one briefly visible - and understanding both is the key to identifying it confidently.

Sclerotium

The sclerotium is the form almost every forager will encounter: a compact, roughly spherical to irregular mass sitting 5-30 cm below the forest floor, attached by a cord of mycelium to a buried log or stump. Small specimens resemble a large potato or a misshapen apple; exceptional ones approach a football in girth and can exceed 15-20 kg, though 0.5-3 kg is more typical of field finds.

The outer rind, called the peridium, is smooth to slightly roughened, initially pale buff-white and darkening to mid-brown or grey-brown with age; it is firm to the touch and roughly 3-6 mm thick.

Cut or broken open, the interior is immediately arresting: dense, bright white to cream, finely marbled with pale buff veins that give the flesh its characteristic "pumpernickel" appearance. The texture is rubbery-firm when fresh, becoming more brittle as the sclerotium ages or dries. The flesh has a mild, slightly starchy scent - faintly reminiscent of cooked rice or bland bread.

Fruiting body

The above-ground fruiting body - a polypore bracket - is far rarer to encounter and emerges only in the aftermath of fire. It forms a cushion-like to broadly lobed, wavy-margined disc or dome, whitish to cream, 10-25 cm across, with a pore surface on the underside composed of tiny, angular, white pores (roughly 2-4 per mm).

The flesh of the fruiting body is white, fibrous, and noticeably spongy compared to the dense sclerotium. As the fruiting body ages it yellows and collapses, and the spent sclerotium left behind is hollow and papery.

Where & when it grows

Habitat

Native bread occupies the ecological niche of a long-distance saprotrophic specialist: it colonises buried eucalyptus timber and other hardwood debris deep in the soil profile, decomposing it via brown rot - an enzymatic process that removes cellulose and hemicellulose while leaving behind a reddish-brown, cubically cracked lignin residue.

The fungus is recorded from a broad sweep of southern Australian forest types:

  • Wet sclerophyll forest and karri (Eucalyptus diversicolor) forest in Western Australia.
  • Dry and wet sclerophyll eucalypt forest in Victoria, New South Wales, and South Australia.
  • Cool-temperate rainforest fragments in Victoria and Tasmania, where Nothofagus (myrtle beech) and Acacia may supplement eucalypt hosts.

Sclerotia form at varying depths - typically 10-40 cm below the surface - directly in contact with or immediately adjacent to decaying logs, root systems, or large buried branch fragments. The surrounding soil tends to be well-drained, slightly acidic, and humus-rich.

Because the sclerotium grows in place on a fixed food source, a single organism may remain at the same location for decades, slowly expanding until the buried wood is exhausted.

Post-fire, the newly bared mineral soil surface, still warm and ash-covered, is often the easiest place to spot emerging sclerotia - they appear as pale domes protruding just above ground level - but they can also be uncovered by erosion, feral pig rooting, road construction, logging operations, and agricultural ploughing.

When

Native bread occupies an unusual calendar position among Australian fungi because the main edible part - the sclerotium - is biologically available year-round. It neither dies back in winter nor requires rain to survive; once formed, it persists underground as a long-lived energy store that can remain viable for years.

Field encounters, however, cluster in the late summer to autumn window (January to May in the Southern Hemisphere), for two compounding reasons:

  1. 1This overlaps peak bushfire season in southern Australia. Fire is the primary trigger for the above-ground fruiting body, and burned ground is also the habitat where foragers are most likely to notice disturbed sclerotia at the surface.
  2. 2Late-summer storms following extended dry spells sometimes cause minor soil movement - cracking, slumping - near logs, which can expose shallow sclerotia.

Outside this window, finds are almost entirely incidental: roadworks, logging, ploughing, or post-flood erosion.

The sclerotium itself does not follow a "season" in the way a gill mushroom does - no spore-drop timetable, no growth flush linked to rainfall. The only reliable seasonal signal is fire: in any year with significant eucalypt forest burns, it is worth searching scorched slopes within days of a fire front passing, while the ground is still disturbed and easy to probe.

How it grows

The life history of Laccocephalum mylittae unfolds in slow motion compared to almost any other edible fungus in the Australian bush. The mycelium colonises buried hardwood - most commonly eucalyptus root systems and large logs - and begins the patient work of brown-rot decomposition.

As carbohydrates are liberated, they are not immediately consumed. Instead the fungus packs them into glycogen and other storage compounds and consolidates them into the sclerotium, building a dense reserve that can take years to reach harvestable size.

A sclerotium grows by incremental addition of new rind layers and internal mass: the outside darkens and firms while the interior remains turgid and white. Growth rate is highly variable and poorly studied, but estimates suggest a sclerotium the size of a tennis ball may represent several years of accumulation; a football-sized specimen could plausibly be a decade or more old.

The sclerotium functions as both an energy reservoir and a drought-survival organ. During dry years the mycelium may enter near-dormancy, with the sclerotium sustaining the colony on stored reserves alone.

When fire sweeps through, heat and smoke signals (likely volatile compounds including ethylene and carbon monoxide) trigger a rapid developmental switch: the fungus mobilises all stored reserves and drives the sporocarp (fruiting body) up through the soil and ash within days.

This is a one-time event per sclerotium - the entire energy store is consumed in producing the fruiting body, leaving only an empty rind. The mycelium on the buried wood may or may not survive to regenerate a new sclerotium, depending on how deeply the fire heat penetrated the soil.

Fruiting conditions

Fruiting-body emergence is stimulated by bushfire rather than by typical rain/temperature cues; the long-lived underground sclerotium persists independently of seasonal weather.

Look-alikes

The sclerotium of Laccocephalum mylittae is a morphologically unusual object - a large, dense, underground fungal mass with a marbled white interior - and in practice it is unlikely to be confused with any toxic species. There are no known deadly lookalikes in Australian habitats.

Superficially, a freshly excavated sclerotium could be mistaken for:

  1. 1The sclerotia of other Australian polypores, notably Laccocephalum sclerotipes and related taxa, which are similarly shaped but typically much smaller, less dense, and associated with different host substrates - they are equally non-toxic.
  2. 2Large, pale, rounded bracket fungi or conks that have detached and been buried by leaf litter, but these lack the dense, marbled interior and firm rind.
  3. 3The underground resting stages of some other wood-decay fungi - again, none are toxic in the Australian context.

The decisive distinguishing features are the combination of size (larger than almost any comparable structure), the thick, firm, buff to grey-brown peridium, and the dense, rubbery, finely marbled white interior flesh - no toxic Australian fungus shares all three.

If found near recently burned eucalypt forest and accompanied by an emerging polypore bracket, identification is essentially certain. In all cases where doubt exists, a specimen should be submitted to a herbarium (Tom May at the Royal Botanic Gardens Victoria has published on this species) rather than eaten.

Native bread sclerotium is distinctive

The sclerotium is distinctive and is not confused with common edible mushrooms.

Picking & cleaning

Locating a sclerotium reliably requires knowledge, attention to substrate cues, and ideally experience with the specific look of recently disturbed eucalypt forest soils.

The most productive search image is a patch of burned or freshly disturbed ground within eucalypt or karri forest. Look for pale, slightly domed protrusions just breaking the surface, or for the characteristic sour-sweet scent of disturbed fungal tissue and decomposing wood.

Aboriginal people of south-eastern Australia, particularly Tjapwurong communities in western Victoria, located buried sclerotia by probing the ground near charred or partly decayed logs with a pointed stick; the soil gives slightly and feels hollow when a sclerotium is just below.

Once located, excavation is straightforward - the sclerotium generally sits loosely in the soil, attached by a connecting mycelial cord to the buried wood, and can be worked free with a digging stick or trowel. Use gloves; the outer rind can be gritty with soil and difficult to clean.

Harvest the whole sclerotium intact; partial harvest is not practical since the remaining portion will not regenerate in place once the mycelial connection is broken.

Check the weight and feel: a fresh, prime sclerotium is dense and heavy for its size, with a firm rind that does not flex easily. A sclerotium that feels light and slightly flexible is old, spent, or post-fire hollow and is not worth collecting.

Because individual sclerotia can be very long-lived and the population at any given site may be small, harvest judiciously - leave small or immature specimens, and where possible, note locations for future monitoring rather than exhaustive collection.

Cooking

Aboriginal Australians cooked the sclerotium by roasting it directly in the coals of a fire - the simplest possible method, and one that suits the ingredient well. The heat gelatinises the starchy interior, softening the texture from rubbery-firm to something closer to a dense, cooked tuber or very thick bread.

The flavour is mild - frequently compared to plain cooked rice, bland white bread, or unseasoned potato - with a very faint earthiness from the outer rind. European settlers and bushworkers who encountered the species in the nineteenth century reportedly adopted the same campfire roasting technique, sometimes calling it "underground bread" and treating it as an emergency ration or curiosity rather than a sought ingredient.

Modern preparation can take the same approach:

  1. 1Brush off soil and score the rind in several places to prevent steam-burst.
  2. 2Nestle in hot coals or a covered camp oven for 20-40 minutes depending on size, until a skewer inserted to the centre meets little resistance.
  3. 3The rind chars and is discarded; the interior is scooped or sliced out and eaten hot.

For kitchen preparation, peeling the rind and slicing the interior into thick rounds before pan-frying in butter or fat produces a denser, slightly chewy result with better browning and flavour development than plain roasting.

The bland, neutral flavour makes the sclerotium a receptive vehicle for strong seasonings - it absorbs salt, fat, smoke, and aromatics readily. Drying the interior slices after cooking yields a shelf-stable, protein- and carbohydrate-rich food; Aboriginal communities likely prepared dried portions as a stored emergency ration, though ethnographic accounts are sparse on the detail.

Good to know

Laccocephalum mylittae is an edible species with a well-documented history of consumption by Aboriginal Australians across Victoria, Tasmania, and Western Australia. There are no reports of toxicity from properly identified specimens.

The sclerotium, which is the part eaten, has a mild, bland, slightly starchy flavour that is palatable raw and improves with heat. No known toxic compounds have been isolated from this species.

The principal safety consideration is correct identification rather than any inherent risk. A forager unfamiliar with the species should not eat an underground fungal mass without a reliable identification, as the visual category of "large, rounded underground structure" encompasses a conceptually broad range of organisms.

In practice, however, the specific combination of features described under appearance is highly reliable, and no dangerous Australian species shares it.

For first-time encounters, cross-referencing a fresh specimen with herbarium records or consulting a mycologist before eating is strongly recommended - not because the species is hazardous, but because this is good practice for any unusual species and because the find is almost certainly rare enough that professional documentation has scientific value.

Wash the surface thoroughly before eating; sclerotia harvested from ash-covered post-fire ground may carry surface contaminants.
