How to recognise it

Cyttaria septentrionalis is one of the most distinctive fungi in Australia and New Zealand. Its fruitbodies are small, bright orange spheres - 1 to 3 cm across - covered in a regular honeycomb of shallow pits that gives them the appearance of a tiny golf ball or a miniature orange brain.

This pitted surface is the hallmark of all Cyttaria: the pits are the openings of individual fertile cups (ascomata) in which spores are produced.

Young fruitbodies begin as smooth, pale cream or ivory spheres but rapidly colour up to a vivid orange or orange-yellow as the ascomata open. The tissue is gelatinous and softly elastic when fresh, not crumbly or dry.

There is no stem; the bodies sit directly on - or are partly embedded in - the knobbly brown woody galls on beech branches from which they erupt.

Close-up, the contrast between the bright orange fruiting surface and the dark bark and rough gall tissue is immediately eye-catching, and the clusters of bright spheres can make an infected branch look like it is adorned with tiny Christmas ornaments.

Older or weathered fruitbodies desiccate and turn dull orange-brown to rust-coloured.

The flesh, when cut, is faintly translucent pale orange-white and has a very mild, slightly sweet and somewhat neutral taste.

Where & when it grows

Habitat

Cyttaria septentrionalis has one of the most constrained habitat requirements of any Australian fungus: it grows exclusively on living southern beech trees of the genus Nothofagus, and only in the specific rainforest and beech-forest ecosystems where these trees grow.

In mainland Australia this means the cool subtropical and warm-temperate rainforest refugia of the New England Tableland, Border Ranges, and Barrington Tops in northern New South Wales and adjacent Queensland. This is a network of highland environments where Antarctic beech (Nothofagus moorei) has persisted since Gondwana times on cool, moist plateaus above roughly 900 m elevation.

These are restricted, ecologically significant habitats; the Gondwana Rainforests World Heritage Area protects many of the most important sites.

In New Zealand the species has a much wider potential range because Nothofagus forests cover large areas of the South Island and the southern North Island, where beech trees form the dominant canopy across a broad elevational range from sea level to the treeline.

The fungus is not found on dead wood, soil, or any host other than living Nothofagus. The perennial galls it induces on branches are the year-round home of the mycelium; only the seasonal fruitbodies are visible externally.

Within beech stands the most productive trees tend to be mature specimens with established galls, and infected branches that have borne fruitbodies in previous years will typically do so again.

When

Fruiting is a Southern Hemisphere spring to early summer phenomenon, running from approximately August through December, with the main flush concentrated in September, October, and November.

Because the fungus lives within its host year-round and the trigger for fruiting is tied to host phenology rather than to soil conditions alone, emergence is often conspicuously synchronised across an infected stand. When the beech trees begin to break dormancy and resume cambial growth in spring, the galls become active and the fruitbodies push through.

In Australian sites (Barrington Tops, Border Ranges), where the climate is moderated by subtropical latitude and altitude, the fruiting window may be somewhat compressed and vary by a few weeks from year to year depending on the timing of the first warm, moist spring weather.

At higher-altitude New Zealand sites, fruiting can be delayed into November-December. Individual fruitbodies last one to three weeks in moist conditions before desiccating.

How it grows

Cyttaria septentrionalis is an obligate parasite of living Nothofagus and a member of the ancient family Cyttariaceae (Ascomycota, order Cyttariales), a small lineage that diversified alongside the southern beech genus over tens of millions of years as the Gondwana supercontinent fragmented.

No close relatives exist in the Northern Hemisphere; the family's entire distribution mirrors that of Nothofagus across the Southern Hemisphere.

The mycelium penetrates the cambium and wood of living beech branches, stimulating the host to form a characteristic hard, irregular, corky gall - a swollen mass of distorted host tissue that can reach 10 cm or more across after years of growth.

The gall is the permanent residence of the fungus; the orange fruiting bodies are merely the temporary, spore-bearing surface that erupts each spring.

Fruitbodies arise in clusters of 2-15 from the gall surface, expand over days to weeks, and release their spores from the individual ascomata before desiccating. The same gall will typically re-fruit each spring for as long as the branch remains alive.

Heavily infected trees can carry multiple galls simultaneously, though severe infection may weaken individual branches.

The co-evolutionary relationship between Cyttaria and Nothofagus is one of the most compelling examples of host-specialist parasitism in the fungal kingdom, and the isolated populations in the Australian highlands represent a Gondwanan relict of great biogeographic significance.

Fruiting conditions

Fruiting is primarily tied to host phenology (Nothofagus spring growth resumption) rather than being purely rain- or soil-temperature-triggered in the conventional sense. However, warm and moist spring conditions (soil temperatures above ~8°C) accelerate and synchronise fruiting across an infected stand. In Australian highland sites, seasonal rainfall in late winter and spring is the key enabling condition; galls on trees receiving adequate moisture fruit more abundantly.

Look-alikes

The principal lookalikes are other Cyttaria species, all of which are harmless.

In New Zealand, Cyttaria gunnii has been recorded and is considered a separate species from C. septentrionalis, but both are similarly edible.

In the southern South American forests - where most of the Cyttaria literature originates - C. darwinii, C. hariotii, and C. espinosae are the well-known species; none is dangerous.

Within Australia and New Zealand the distinctive combination of bright orange honeycomb fruitbodies growing in clusters on knobbly galls on living Nothofagus is unambiguous and shared by no other organism. No poisonous or deadly fungi are known to resemble Cyttaria.

In a theoretical field sense, the only fungi that could confuse a beginner are orange jelly fungi (Dacrymyces, Tremella foliaceae sensu lato) on dead wood. But these are entirely different in form - irregular, lobed, or gelatinous blobs with no pitted structure - and they occur on dead rather than living wood.

The association with living Nothofagus galls is definitive.

Cyttaria gunnii

Closely related species found in Australia and New Zealand on Nothofagus. Very similar in appearance - orange, honeycomb-pitted spheres on Nothofagus galls - and considered equally edible. Microscopically distinct by spore dimensions and ascoma arrangement. No practical safety distinction; both are harmless.

Darwin's fungus

South American Cyttaria, not occurring in Australia or New Zealand. Broadly similar appearance (yellow-orange, honeycomb-pitted spheres on Nothofagus galls) but more intensely yellow than orange. Not a realistic confusion in the Australian/New Zealand context. Edible.

Orange jelly fungi

Orange jelly fungi occur on dead wood (not on living tree galls) and are irregular lobed or cushion-shaped blobs with no pitted honeycomb structure, no spherical form, and no association with living Nothofagus. Entirely different in context. Not toxic.

In the kitchen

Picking & cleaning

Select fruitbodies that are firm, fully orange, and clearly pitted - these are at the optimal stage of ripeness. Very young, still pale cream bodies are edible but less flavourful; older, desiccated bodies are shrivelled and of no culinary value.

The fruitbodies grow in clusters on galls, typically on branches anywhere from low to several metres above the ground; lower-branch galls are the most accessible.

  • Detach each body at its base with a gentle twist or small knife, leaving the gall intact to preserve future fruiting from the same site.
  • The flesh is soft and bruises easily, so carry in a rigid container.
  • Use the same day if possible, as the gelatinous texture deteriorates quickly after picking.

In Australia, populations of Nothofagus moorei are restricted to fragile, protected highland rainforest: harvest sparingly and never damage the host tree or gall structures.

Do not collect where the species' host is itself threatened or the site is within strictly protected areas without the appropriate permits.

Cooking

The flavour of Cyttaria septentrionalis is mild, slightly sweet, faintly earthy, and somewhat neutral - similar to other Cyttaria species - with a softly gelatinous texture that is pleasant but not assertively flavourful.

It can be eaten raw when fresh and firm, as indigenous peoples ate the related South American species.

Cooked, it is best treated briefly: a short sauté in butter or olive oil warms it through and concentrates the delicate flavour without causing the gelatinous flesh to collapse entirely.

It makes a striking garnish on spring dishes, adding vivid orange colour, and pairs well with mild cheeses, spring vegetables, and acidic dressings.

Brief blanching in lightly salted water followed by refreshing in cold water can help retain colour and texture before final preparation.

Pickling in light brine or mild vinegar is a successful preservation method, as documented for the South American Cyttaria ('llao-llao').

The flesh is high in water and gelatinous carbohydrates with modest protein, so it functions best as a garnish or accent ingredient rather than a substantial meal component.

Its primary value for many foragers is the sheer novelty and beauty of finding vivid orange honeycomb spheres glowing in the gloom of a beech forest.

Good to know

Cyttaria septentrionalis is considered edible and safe. No toxic compounds have been identified in any species of Cyttaria, and the genus has a documented history of safe consumption across multiple cultures in South America going back thousands of years.

This is most thoroughly documented for C. darwinii among the Yahgan people of Tierra del Fuego, as recorded by Charles Darwin during the Beagle voyage.

The Australian and New Zealand species are less well-documented ethnographically, as the Nothofagus forests they inhabit were not associated with foraging cultures that left detailed historical records equivalent to those of the Fuegian peoples.

Modern foraging guides in Australia and New Zealand list C. septentrionalis as edible, and no adverse reactions attributable specifically to this species appear in the toxicological literature. As with any foraged food, individuals with general mushroom sensitivities should start with a small quantity.

The main safety consideration is correct identification - which is straightforward given the species' utterly distinctive appearance and exclusive association with Nothofagus galls.

In Australia, foragers should also consider the ecological sensitivity of Antarctic beech habitat: the Nothofagus moorei rainforests of north-eastern New South Wales are protected and globally significant, and responsible, minimal-impact foraging is essential.
