In central Chile (Maule, Biobío) the main harvest window is mid-September to late October. Further south, cooler conditions shift peak timing by one to two weeks later.

How to recognise it

Cyttaria johowii presents the same fundamental body plan as all members of its small but remarkable genus: pale, roughly spherical fruiting bodies emerging in clusters from knobbly galls on living beech branches, their outer surface resolving from initially smooth to a distinctive honeycomb of shallow, cup-shaped pits as the fungus matures.

The size is modest - typically 1.5 to 4 cm across per individual body - but the clusters can be conspicuous, pressing multiple spheres against each other like a small bunch of grapes on the bark.

The most useful colour character is how pale johowii is relative to its congeners. Where Cyttaria hariotii produces a vivid, saturated deep-orange, and C. darwinii a bright egg-yolk yellow, C. johowii is characteristically cream to ivory-white or at most a very faint yellowish-white - some accounts describe mature fruitbodies as 'whitish to pale cream' without any strong yellow or orange tones.

The pits (ascomata) cover the whole outer surface in a regular mosaic and are the structural feature that defines the genus.

The interior is uniformly gelatinous and pale, with a mild sweetness and clean smell.

There is no stalk, no ring, no gills, and no volva - nothing about this fungus resembles a conventional capped mushroom.

Where & when it grows

Habitat

Cyttaria johowii is inseparable from Nothofagus obliqua, the roble or hualle - the dominant deciduous southern beech of the foothills and Andean valleys of central and south-central Chile.

Where this tree grows, C. johowii may be found on its branches. It is one of the most commercially important native trees in Chile, forming extensive natural stands and managed forest across the Maule, Biobío, La Araucanía, and Los Lagos regions.

The fungus is a true parasite - it penetrates the cambium and woody tissue of the living tree and stimulates the host to produce hard, woody swellings (galls or nudos) that can persist on branches for many years. Within these galls the mycelium lives year-round, largely invisible, metabolising the carbohydrates the tree makes available.

The galls themselves are easy to recognise once you know what to look for: irregular, corky, brown-grey swellings on branches, sometimes encircling the branch entirely, sometimes bulging to one side. Only when spring arrives and the tree resumes growth do the fruitbodies erupt through the gall surface.

In its core range - the Andean foothills of Maule, Biobío, and Araucanía - C. johowii is one of several digüeñe species that share the same forest system, alongside C. espinosae on the same N. obliqua host.

When

Spring in the Southern Hemisphere: September through November, with the most productive weeks typically falling in late September and October.

The timing is governed not by rainfall or soil temperature in the way a typical gilled mushroom is triggered, but by the hormonal and vascular changes in Nothofagus obliqua as it breaks dormancy.

When the beech begins to push out new leaf buds, the resident fungal mycelium in the gall responds almost simultaneously, and fruitbodies can appear to erupt from multiple galls on the same tree within a few days of each other.

This synchrony is both ecologically interesting and practically useful to foragers: once one productive tree in a stand begins to fruit, others nearby are likely to follow within a week.

Individual fruitbodies last one to three weeks in cool, moist conditions before softening, collapsing, and releasing their ascospores.

The total accessible harvest window at any one location is brief - often only three to five weeks - which gives the annual digüeñe harvest its character as a seasonal event rather than a routine gathering.

How it grows

Cyttaria johowii belongs to the family Cyttariaceae, an ancient and isolated lineage of Ascomycota with no representatives in the Northern Hemisphere and no close relatives outside the Nothofagus-bearing forests of the Southern Hemisphere.

The evolutionary partnership between Cyttaria and Nothofagus is one of the most striking examples of host-specialist parasitism in mycology. The two lineages are thought to have coevolved across the fragmentation of Gondwana over tens of millions of years. That is why Cyttaria species are found wherever Nothofagus forests persist - Chile, Argentina, Australia, and New Zealand - and nowhere else.

Infection of a new host begins when ascospores alight on young bark and germinate; the hyphae penetrate the outer layers and colonise the cambium and wood. The host responds by flooding the infection zone with cell-proliferation signals, walling off the fungus in a growing mass of abnormal woody tissue - the gall.

This process continues for years. Established galls can reach the size of a large fist, representing the accumulated defensive reaction of a tree that has been parasitised for a decade or more.

Within this gall the fungus is not static: it metabolises host carbohydrates, extends its hyphal network through the gall tissue, and eventually, when the internal conditions and host phenology align in spring, directs resources outward into the compact, gelatinous fruitbodies that push through the bark surface.

Spore dispersal from the shallow ascomata relies on wind, rain splash, and visiting insects and birds attracted by the mild sweetness.

Fruiting conditions

Fruiting is driven by host-tree phenology rather than soil moisture or temperature pulses. Fruitbodies emerge from perennial galls on living Nothofagus obliqua in spring (September-November) as the tree breaks dormancy, independently of short-term rainfall events. Warm, humid spring conditions support development once the tree-initiated flush has begun, but the primary trigger is internal to the host-parasite system.

Look-alikes

The realistic lookalike set for Cyttaria johowii is restricted entirely to other Cyttaria species - all of which are harmless edibles - and to Cyttaria in general from non-Cyttaria fungi that are also not dangerous.

The most important separation for field purposes is from Cyttaria espinosae, which shares the same primary host (N. obliqua) and geographic range almost exactly. The main characters used to separate the two in the field are colour and body size:

  • C. espinosae tends to more cream-to-apricot-orange, while C. johowii is typically paler (cream to white-ivory).
  • C. johowii bodies may average slightly smaller, though there is overlap.

Microscopic characters (spore dimensions, ascoma architecture) are definitive but unnecessary for safety, since the two species are equally edible and equally used as digüeñe in Chilean cuisine.

  • Cyttaria hariotii (on a wider range of Nothofagus species further south) is distinctly more intensely orange.
  • Cyttaria darwinii (further south into Tierra del Fuego) is bright yellow.

No poisonous or dangerous fungus in the South American context grows from galls on living Nothofagus in the spherical, honeycomb-pitted form that characterises all Cyttaria. The key safety check - confirming the host and the gall attachment - is definitive and straightforward.

Darwin's fungus

Distributed in the extreme south (Tierra del Fuego, Magallanes). Colour is bright egg-yolk yellow - stronger than the pale cream-white of C. johowii. Grows primarily on Nothofagus antarctica and N. betuloides. Edible; described by Darwin during the Beagle voyage as the staple food of the Yahgan people.

Digüeñe / Darwin's beech orange

Shares the same primary host (Nothofagus obliqua) and overlapping range in central Chile. C. espinosae is typically slightly warmer-toned - cream to apricot-orange - while C. johowii is paler, leaning cream to ivory-white. Body size and ascoma details differ microscopically. Both species are sold and eaten as 'digüeñe' without distinction by most foragers; neither is harmful. No practical safety distinction.

Llao llao

More southerly distribution (Andean Patagonia, Tierra del Fuego). Most easily distinguished by colour: C. hariotii is a vivid, saturated deep-orange - noticeably darker and more intensely pigmented than the pale cream of C. johowii. Also grows on a wider range of Nothofagus species. Edible; no safety distinction.

Other Cyttaria species

All known Cyttaria species are edible and grow only from galls on living Nothofagus branches. The spherical, honeycomb-pitted, sessile fruitbody growing from a beech gall is unmistakable as a genus; no harmful fungus shares this combination of characters.

In the kitchen

Picking & cleaning

Select fruitbodies when they are firm and springy - the body should feel dense when lightly pressed, not soft or yielding. At this stage the surface is evenly coloured (cream to pale ivory-white) with pits that are clearly formed but not deepened to the point of weeping fluid.

Overripe specimens feel noticeably soft and may begin to release a clear, slightly sticky fluid from the pits - still technically edible but past peak texture, and more prone to bacterial spoilage.

Harvest with a gentle lateral twist or a small knife cut at the base, leaving the gall itself entirely undamaged so it can produce fruitbodies in future years. The gall is a perennial structure and removing or injuring it reduces future yields from that tree.

Carry in a rigid container - the gelatinous flesh bruises easily in a plastic bag under its own weight. Shelf life after harvest is short: process the same day or within 24 hours, storing in a cool (not frozen) place loosely covered.

Rinse gently in cold water before eating; a small amount of apple cider vinegar in the rinse water is a traditional practice that slightly firms the texture.

At markets in central Chile the digüeñe season creates a genuine spring trading event: fresh fruitbodies are sold from roadside stalls across the Araucanía and surrounding regions, often alongside other forest products. Quality at market varies; select the firmest, palest specimens.

Cooking

The flavour of Cyttaria johowii is mild, slightly sweet, and cleanly neutral - not earthy or umami-rich in the way of most culinary gilled mushrooms, but pleasantly edible in its own right. The texture is gelatinous and lightly elastic when fresh, somewhat like a firm, sweet jelly.

Raw consumption is traditional: rinsed and dressed simply with sliced onion, fresh cilantro, and a squeeze of lemon juice or a dash of apple cider vinegar, in the salad format shared with C. espinosae. The acidity firms the gelatinous flesh slightly and lifts the mild flavour.

Lightly cooked preparations also work well:

  • a brief sauté in butter or olive oil until just warmed through
  • folded into scrambled eggs
  • used as a filling in empanadas alongside onion and cheese

Avoid prolonged cooking: sustained heat collapses the jelly-like structure and causes the bodies to weep and flatten.

As with C. espinosae, pickling in a light vinegar brine is a traditional preservation method that extends shelf life and adds a pleasant sharpness.

Use acid, salt, or brief heat to best advantage; heavy sauces or long braises overwhelm rather than complement the delicate character. Because the fresh product deteriorates quickly, eat or cook the same day as harvest whenever possible.

Good to know

Cyttaria johowii has no established toxicity. No toxic compounds have been identified in any Cyttaria species, and the genus as a whole has a secure and extensive record of safe human consumption across the Nothofagus forest regions of the Southern Hemisphere.

The related C. espinosae is among the most commercially traded wild mushrooms in Chile, exported to several countries, with no reports of intrinsic toxicity. C. johowii participates in the same cultural tradition of digüeñe gathering and has been harvested for generations by communities in the Maule, Biobío, and Araucanía regions.

The practical safety notes are:

  1. 1Confirm the substrate - the honeycomb-pitted, sessile spheres on a living Nothofagus gall are unmistakable.
  2. 2Harvest fresh, firm fruitbodies only; overripe specimens that are weeping fluid or soft may cause mild gastrointestinal upset due to bacterial spoilage rather than any fungal compound.
  3. 3Use within 24 hours of picking.

No deadly or seriously toxic fungus produces a similar appearance on Nothofagus galls. For individuals with general mushroom sensitivities, a small first portion is advisable. There are no records of serious poisoning attributable to C. johowii in the scientific or clinical literature.
